Zucchini Brownies

A great way to use extra zucchini! I was glad I'd read the other reviews about the dry texture of the batter. I used 1/4 c. oil and 1/4 c. applesauce, then a little extra applesauce at the end because it was almost too dry to mix. Instead of frosting, I just sprinkled chocolate-peanut butter chips on top after baking. The brownies aren't super choclatey or sweet, but very good with something sweeter on top.

Thai Chicken Pizza with Carrots and Cilantro

I love Thai chicken pizza and this was the first time I attempted making it at home. I thought it turned out great! Didn't use the carrots, but added some sliced red pepper and a little mozzarella cheese. Would maybe cut back a little on the peanut butter next time since the peanut flavor was strong, but still enjoyed it.

Broccoli and Onion Casserole

Not bad, but the broccoli ends up being quite soft. If made it again, I think I'd maybe skip the steaming and/or bake it for less time.
