Dessert Crepes

I love these crepes! Easy to make and relatively healthy! I made no changes to the batter except I used bread flour instead of AP flour since I had none on hand. I stuffed the crepes with bananas cooked in butter, brown sugar and peanut butter. It was a hit! Thanks so much.

Funnel Cakes I

I like this recipe... easy to make and it does taste and look like funnel cakes you get at carnivals. The only change I made was using bread flour instead of AP flour because that was the only kind of flour I had. Also, I used a clean, clear plastic bag (like the ones you see when you buy produce in the supermarkets), fill them with the batter, snip one of the edges and it made beautiful funnel cakes. I used tons of powdered sugar because we like out funnel cakes sweet. Thanks for the recipe!

Puggie Woogie

It's a simple recipe that gets the job done if you want something to fill you up during breakfast. Personally, I don't like fried food very much so I fried these in a small amount of oil. It still puffed up beautifully. I couldn't roll it in sugar (they wouldn't stick to the woogies so I sprinkled powdered sugar on them instead. Instead of AP flour, I used bread flour and they work well. And yes, they do remind me of donuts (just without the fuss of using yeast)! Give them a try!

Gone to Heaven Chocolate Pie

Oh my goodness... this pie is amazing! I didn't make any changes at all. It's very easy to make (especially if you are staying in the dorms with only a microwave and a fridge). It's very rich though, so take it slow!

Extreme Banana Nut Bread 'EBNB'

I don't know how the bread in the picture came out so nicely. Mine was very greasy eventhough I had it in the refrigerator for hours before I ate it. There are much nicer (and healthier) banana breads out there.

Bacon and Date Appetizer

Whatever you do, don't substitute with lean turkey bacon. I tried to make it healthier by doing so but it just didn't have the rich flavor it's suppose to have. Overall, it's good, but it would be better to only put half an almond into each date.

Chocolate Peanut Butter Cup Cookies

The cookies are a tad too sweet for me eventhough I didn't add any peanut butter chips in them. I would suggest cutting down the sugar by 1/2 C. I froze the batter before baking them so they would be less spread out and more puffy (I tried frozen and unfrozen). Definitely worth a shot :)

Shortbread Cookies II

I love the way these cookies melt in your mouth! The only change I did was to add a pinch of salt into the batter. I made them into chlocolate chip cookies by adding 3/4 C chocolate chips. It would have gotten 5 stars if it isn't for a weird aftertaste - maybe it's from the salt I added or that I'm not using fresh flour.

Banana Oatmeal Cookies II

They are soft cookies but do not have the texture of cakes (which is good). The rolled oats give them a good texture. The taste is not bad but need some getting used to. I cut the shortening to 1/2 C, sugar to 3/4 C and used pumpkin pie spice instead of cloves. Also, instead of adding walnuts, I substitute with chocolate chips (1 C). In addition, I used 3 medium-sized bananas. Two thumbs up for the fact that they are healthy cookies :)
