About this Cook
I am a mom of 2 busy young boys. Jakob is 5 and Nathan is 2. I just started back to work....part time, boy am I busy now! I enjoy cooking and baking goodies for my family. I am beginning to notice that I have a bit of an obsession with cook books. I don't use them as much as I used to now that I have found allrecipes, but I still love to read them. I also pick up new cooking magazines whenever I see them. My computer time is usually spent here at All Recipes or on the cooking forum I belong too. It's a great place where a group of us share a love of cooking and great friends. If you'd like to talk cooking you can email me at amiee@courierpub.com go to http://thequalitycook.phpbbnow.com/index.php and join our forum!
My favorite things to cook
For me cooking is a way to connect with my family and friends. I have been cooking so many different things since finding allrecipes. I love to experiment in the kitchen and try things that are new or different to us. I love baking but it has always been cakes and cookies. Recently I have begun to bake homemade bread and I love the whole process. I cook from scratch most of the time now and rarely buy convience foods.
My favorite family cooking traditions
Making Christmas cookies is something that I have been doing for the past few years. My son helped this year and we had a great time. Now we try to test a different cookie recipe every month.
My cooking triumphs
Some nights just getting a home cooked meal on the table is a triumph! And when my 5 year old says, "Mama, this is so good!" I know I have a winner!
My cooking tragedies
Who hasn't had a tragedy? My most recent involved cookie dough, a mixer and some egg shells!!

Finnish Kropser (Baked Pancakes)
This was yummy....and easy too. I wanted something quick for breakfast this morning and this came together in no time. Tasted fantastic also. I put homemade strawberry freezer jam on mine and hubby used syrup. Some fresh fruit on top would be great too.

Couscous and Cucumber Salad
Made this tonight. I followed some other reviews and added some diced red pepper, sun dried tomatoes and feta. It was a pretty good salad. I think I might like it better with orzo. Thanks KRISTAB.

Smooth Sweet Tea
I don't think it gets any more refreshing! This is a great Sweet Tea. I doubled the recipe using family size tea bags (6 of them) and about 1 3/4 cups of sugar. The baking soda does the trick to keep the tea nice and smooth. Thanks cookincode3 I'm sure we will be enjoying this all summer!
