Holiday Chicken Salad

This is one of the best chicken salad's I have ever had. I would make it just as written with the exception of two things. First, I seasoned my chicken with a poultry rub and then ROASTED it. Roasted chicken has much better flavor than boiled chicken. I also toasted the pecans. Other than that don't change a thing. This recipe is a keeper!

Chocolate Caramel Brownies

I would give these brownies 10 stars if I could! My husband said that these were the best brownies he's ever eaten...then he said they could be the best thing he's ever put in his mouth. Our neighbor said they were a drug! He found himself sneaking in our house and snagging brownies when no one was looking...sure sign of a junkie! I made these exactly as written! Don't change a thing!

Beef Tenderloin With Roasted Shallots

MY OH MY! This was so good! I followed the recipe exactly...except..I did not add the bacon bits to the sauce. I did however, brown my tenderloin in bacon grease. It's a pretty easy meal that looks impressive and tastes fabulous! Serve this one to company!

Greek Pasta Salad I

Yummy! Yummy! I loved this dish! I did make a few changes, however. I roasted the red peppers, I replaced the mushrooms with chopped artichoke hearts and I replaced the pepperoni with cubed grilled chicken breasts. I also made sure that I mixed the halved cherry tomatoes in, while the pasta and chicken were still hot. It softened them just enough and really brought out their flavor. I love vinegar and I found the amount used to be just right. I will be making this again and again.

The Dreamiest Peaches

I really enjoyed this recipe! Not only was it quick, but really yummy too. I did, however, change a few things about the recipe that I believe solved many of the problems listed in other reviews. I used canned peaches in heavy syrup, so I gently rinsed them off, so it wouldn't be so sweet. I crushed my vanilla wafers to a flour like consistency and made my crumb mixture like I usually make any crumb topping. After putting the peaches in a baking dish and sprinkling on the topping, I baked them in a 350 degree oven for about 10 min. The peaches were nice and warm, so I served it with a scoop of ice cream! This version does take a little bit longer, but the extra 10 or 15 minutes is worth it, I believe.

Poppy Seed Muffins

These are terrific! I made over 50 muffins for a church function and these were the first ones to go. I made standard size muffins, and this recipe made almost 24. I also used a shortcut for the glaze, I just mixed orange juice and powdered sugar. I am sure the other glaze is much better, but I was in a rush and this glaze worked just fine and was quite good.

Pork Tenderloin with Creamy Herb Sauce

I made this recipe using boneless center cut pork chops and mushrooms, onions and garlic in the sauce instead of carrots. It blew us away! It was sooooooo Yummy! I am going to make this for a church dinner that is coming up soon. Thanks!

Cranberry Crumb Pie

Yummy! This pie was delicious! I was dubious about putting it in the oven, but I did anyway and it turned out great! I did a couple of things differently. First, I added the brown sugar to the crumb mixture instead of the cranberry mixture. I also ommited the cornstarch. I basically just put the cranberry sauce on top. I also used a graham cracker crust. I'll be making this again!

Oven Fried Parmesan Chicken

Wow! I recently made this recipe for my Pastor. She was responsible for bringing the meat to a conference and asked me to make something. I converted this recipe to feed 40 and boy was it delicious. It was so good in fact, my Pastor only got 39 servings...I ate one! The only thing I did different was that I dredged the chicken in the garlic butter and bread crumbs twice. This gave the chicken a wonderful slightly crunchy crust! I'll be making this again really soon! Thanks!

Orzo with Parmesan and Basil

I loved this recipe! I made a few changes, but I feel certain, that it would be delicious just as it is written. I used part butter and part olive oil and I sauted minced garlic with the orzo. I then added crushed red pepper flakes and a pinch of nutmeg and a good bit of parmesan cheese and ommited the basil. Yummy! I also think that for a really fast, but delicious side dish, I would made the recipe just as written, but instead of fresh basil, I would add a couple TBS of pesto!
