Orzo Shrimp Stew

Reviewed: Jan. 28, 2010
Really good. I used chopped sun dried tomatoes instead of canned tomatoes. I had to add more chicken broth for the orzo to be soft enough. I did change the order of things too. I sautéed the shrimp and then set aside keeping it warm, then put broth, garlic and basil in the pan and brought to a boil, then added the orzo and cooked it almost half way, then added the broccoli and tomatoes ( I don't like mushy broccoli. ) When then the broccoli was done to my liking, I added the shrimp. I did not add the butter at all, which made it WW friendly! I will definitely make this again!

Kids loved it! I added some monterey jack cheese only because I had a little left. It was really creamy and delicious.

Corned Beef and Cabbage I

Can't go wrong. Basic, easy recipe. I did add 8 cloves of garlic and 2 bottles of beer (for 5 lbs of meat). Thanks for keeping this so simple. Less is more sometimes.

Antipasto Squares

Reviewed: Jan. 1, 2008
Excellent!! I used gouda and mozzarella because it's all I had and it was still great. Also roasted my own red pepper. Definately let it cool at least 30 minutes if you want nice clean cut squares. Glass baking dish is a must. Thanks for a great recipe.

Bacon Cheese Frittata

this is a great recipe, makes a beautiful light dinner. You can use whatever vegatables or meat you have. I dont add melted butter, just use a little to saute the veggies first. I will definately make it again and again. Thanks

Orzo and Rice

Reviewed: May 23, 2010
you know, this was great. You can add just about any seasoning you want to it. Like other reviewers have said, its like rice a roni -but without MSG and all othe ther preservatives that seem to be in just about everything. when the pasta was almost toasted I added one clove of thinly sliced garlic (we love garlic) The kids loved it. We had it as a side to our pan seared filet mignon(it was on sale) and roasted veggies. I will definately make it again, probably quite often. Thank you!

Italian Zucchini Boats

Reviewed: Nov. 9, 2007
Really good! I did as others suggested and sauteed onions, garlic and then zucchini pulp in evoo. I also added some leftover gound turkey, about 1/2 cup. Then used a little crushed stuffing mix so I could cut back on powdery dry breadcrumbs. Even if I didn't have the ground turkey, I would definately make again. Thanks!

Alabama Fire Crackers

I wasn't too sure about this one, but tried it anyway -and was glad I did! They are really good. I just wish they made a low salt ranch mix. next time I will try a little less oil and 1 1/2 packets of ranch instead of two. They go great with a cold beer ;) Give them a try.

Excellent. I had some white beans already soaked, left over from another recipe that I didn't use so I added them to this and they fit in well. Thank you for the great recipe!

Slow Cooker Italian Beef for Sandwiches

Reviewed: Jul. 26, 2010
used beef broth and added two packets of dressing and omitted any extra salt. Also used fresh garlic. like others have said, it was awesome on toasted rolls with provolone. Cooked in crock pot about 5 hours on high for 4 lb meat. just keep checking it towards the end to see how easy it shreds.

These were great! My husband and boys liked them too. I used non stick foil and sprayed them with pam before baking. For a dipping sauce I used light mayo, dijon mustard, black pepper and a little honey. Thanks for the recipe :)

The only thing I did different was to use sundried tomatoes that were not in oil. A nice side dish.
