Hot and Spicy Grilled Shrimp

Reviewed: Sep. 24, 2006
Excellent! I didn't have the Morton Hot Salt so I just used a little sea salt and cayenne. My 7 year old asks for this often. I usually make a skewer or two of zucchini and mushrooms basted in the same sauce. It's awesome!! Must try! Thanks for the great recipe. I can whip this up without even looking at this point.

Chile Verde II

Reviewed: Oct. 28, 2006
This was great! Roasted and peeled all the peppers except the jalapenos. Added cubed potatoes. Will definately make again. Thanks! Modified review 6/1/2009 -I have made this quite a few times now and we LOVE it! If you don't like the green, then you don't like verde!

Garden Casserole

Reviewed: Jan. 1, 2007
This was a great way to have eggplant without it being breaded and fried. I did cut the oil back a bit and used a little pam, used half panko half regular bread crumbs and used low fat cheese. Really good, thanks!

Rosemary Zucchini Sticks

Reviewed: Feb. 4, 2007
These were great! My husband and boys liked them too. I used non stick foil and sprayed them with pam before baking. For a dipping sauce I used light mayo, dijon mustard, black pepper and a little honey. Thanks for the recipe :)

Boilermaker Tailgate Chili

Reviewed: Feb. 4, 2007
Excellent! Browned ground beef and used ground turkey instead of the sausage. Added chopped up chorizo once everything was in the crock pot. Cooked it for about 8 hours. Absolutely wonderful! Thanks!

Tater-Dipped Eggplant

Reviewed: Feb. 25, 2007
Tasted too much like potato. I used store brand potato flakes maybe I should have used better. Won't be making this again, but thanks, always willing to try an eggplant recipe.

Sweet Russian Cabbage Soup

Reviewed: Feb. 25, 2007
Excellent. I had some white beans already soaked, left over from another recipe that I didn't use so I added them to this and they fit in well. Thank you for the great recipe!

Chewy Oatmeal Cookies I

Reviewed: Apr. 7, 2007
Great cookies! I made one batch with butterscotch chips instead of chocolate and craisins instead of raisins, and also a regular batch. They were both good. Baked for 13 minutes. Thanks for the recipe!

Simple Ranchy Breaded Fish Fillets

Reviewed: Apr. 9, 2007
Never thought ranch would go well with fish, but it was really good! Next time I will use a little water instead of oil for the paste to cut down calories. We like our fish on the 'well done' side so I cooked it med-low until it was cooked through and nicely browned. My 5 yr old son said I was the best cook ever! =) Thanks for the recipe, I will make it often.

Grilled Bacon Jalapeno Wraps

Reviewed: May 26, 2007
Bacon wasn't fully cooked and cheese was melting out. Maybe better on foil in the oven?

Cajun Appetizer Meatballs

Reviewed: May 26, 2007
The meatballs are very tasty, but the sauce was too rich and overpowered them. I will definately make the meatballs again, but will either barely coat them in the sauce or go without.

Italian Zucchini Boats

Reviewed: Nov. 9, 2007
Really good! I did as others suggested and sauteed onions, garlic and then zucchini pulp in evoo. I also added some leftover gound turkey, about 1/2 cup. Then used a little crushed stuffing mix so I could cut back on powdery dry breadcrumbs. Even if I didn't have the ground turkey, I would definately make again. Thanks!

Flank Steak Pinwheels

Reviewed: Nov. 14, 2007
Really good. I sauteed the onions and garlic first in a little olive oil. Toothpicks didn't work so well. Next time I will use my small metal kabob skewers or kitchen twine. I also will cook a little less since we prefer med, this was more on the med/well side. Thanks for the recipe, I will definately make again.

Excellent! I had some of my own sauce left over so I used that instead of the jar stuff. I will definately make it again. Thanks!

Roasted Red Bell Pepper Soup

Reviewed: Dec. 24, 2007
This was ok. I roasted and skinned the peppers, used only 1 can of beans. Strained it well (we like cream soups with no chuncks), added 2 tbs heavy cream and one 5 oz can of fat free evaporated milk to cut back on fat/calories. Not sure if I will make it again, but still glad I tried it.
