Pasta Primavera

Reviewed: Dec. 15, 2008
This was ok. It did really have a 'packaged' taste even after adding extra parmesan and a little cream cheese. The kids ate it and it was quick but not sure if I'd make it again. But glad I tried it.

Mom's Baked Macaroni and Cheese

Simple, quick and delicious. I did add a little black pepper and used all cheddar. The soup gives it the creamy base. Will definately make again. Thanks.

Slow Cooker Beef Stew III

Reviewed: Nov. 4, 2008
The Golden Mushroom soup is key. It's totally different than using plain chicken broth as another user mentioned. I used beef broth instead of water and only half of the dry onion soup mix. Added some extra spices. Added mushrooms in the last 2 hours. Cooked about 8 hours on low. Wonderful!

Easy Tuna Casserole

Kids loved it! I added some monterey jack cheese only because I had a little left. It was really creamy and delicious.

Shrimp Scampi Cheesecake Appetizer

Reviewed: Mar. 18, 2008
These are great. I have used both the phyllo cups and also the new mini puff pastry shells. I use half regular gouda and half smoked.

Corned Beef and Cabbage I

Reviewed: Mar. 17, 2008
Can't go wrong. Basic, easy recipe. I did add 8 cloves of garlic and 2 bottles of beer (for 5 lbs of meat). Thanks for keeping this so simple. Less is more sometimes.

Bacon Crackers

Reviewed: Feb. 28, 2008
Just ok. Too much grease soaked into the cracker, even when baked on a cooling rack. For that much fat and colories, I'd rather have something else.

Honey Pork Oriental

Reviewed: Feb. 1, 2008
This was good. I sliced the meat and vegetables on a diagonal rather than cube and chop for better presentation. I also added fresh broccoli that I had on hand and a bit more ginger. I will definately make again, Thank You!

Antipasto Squares

Reviewed: Jan. 1, 2008
Excellent!! I used gouda and mozzarella because it's all I had and it was still great. Also roasted my own red pepper. Definately let it cool at least 30 minutes if you want nice clean cut squares. Glass baking dish is a must. Thanks for a great recipe.

Very good, but will cut down on the salt next time.

Roasted Red Bell Pepper Soup

Reviewed: Dec. 24, 2007
This was ok. I roasted and skinned the peppers, used only 1 can of beans. Strained it well (we like cream soups with no chuncks), added 2 tbs heavy cream and one 5 oz can of fat free evaporated milk to cut back on fat/calories. Not sure if I will make it again, but still glad I tried it.

Roasted Vegetable Lasagna

Reviewed: Nov. 28, 2007
Excellent! I had some of my own sauce left over so I used that instead of the jar stuff. I will definately make it again. Thanks!

Flank Steak Pinwheels

Reviewed: Nov. 14, 2007
Really good. I sauteed the onions and garlic first in a little olive oil. Toothpicks didn't work so well. Next time I will use my small metal kabob skewers or kitchen twine. I also will cook a little less since we prefer med, this was more on the med/well side. Thanks for the recipe, I will definately make again.

Italian Zucchini Boats

Reviewed: Nov. 9, 2007
Really good! I did as others suggested and sauteed onions, garlic and then zucchini pulp in evoo. I also added some leftover gound turkey, about 1/2 cup. Then used a little crushed stuffing mix so I could cut back on powdery dry breadcrumbs. Even if I didn't have the ground turkey, I would definately make again. Thanks!

Cajun Appetizer Meatballs

Reviewed: May 26, 2007
The meatballs are very tasty, but the sauce was too rich and overpowered them. I will definately make the meatballs again, but will either barely coat them in the sauce or go without.

Bacon wasn't fully cooked and cheese was melting out. Maybe better on foil in the oven?

Simple Ranchy Breaded Fish Fillets

Reviewed: Apr. 9, 2007
Never thought ranch would go well with fish, but it was really good! Next time I will use a little water instead of oil for the paste to cut down calories. We like our fish on the 'well done' side so I cooked it med-low until it was cooked through and nicely browned. My 5 yr old son said I was the best cook ever! =) Thanks for the recipe, I will make it often.
