Baked Salmon II

This salmon is AMAZING! A friend of mine who didn't like salmon now does after trying this recipe. Don't hesitate to make it for company! I usually let the salmon sit in the marinade (in a glass baking pan) at least overnight & just leave it in the pan & cover with foil to bake (rather than wrapping the pieces individually in foil). Very easy!

Chocolate Zucchini Bread I

A moist, dense cake-like bread...I followed the recipe pretty closely and it turned out great. It stuck to the pan a bit & the chocolate chips did not disperse evenly throughout the loaves (they sank to the bottom of the bowl, so the last loaf got the most). I sprinkled some extra chocolate chips on top of the loaves to ensure a more even distribution but they didn't sink in. Still delicious overall!

Guacamole

I could take or leave guacamole before, but this recipe turned me into a guacamole lover. You won't be able to stop eating this! I think the lime and cilantro are key to the flavor.

Orzo with Parmesan and Basil

You can follow this exactly or add sauteed spinach and mushrooms at the end (as one reviewer suggested)...either way it is delicious. Every time I make it people absolutely love it.

World's Best Lasagna

The sauce WAS amazing...loved the fact that it was from scratch and cooked until the flavors blended. However, I cut back on the salt and it was still a bit too salty (for my taste). I also couldn't cut the mozz cheese thinly enough to do 3 layers of it...next time I will just shred so it will cover more evenly. Had lots of sauce left over and ended up dumping it all on top...need to put more than it tells you on each lower layer. A few months later: I am upping my rating to 4 stars b/c I tried this recipe with Tinkyada Gluten-free lasagna noodles (drained VERY well and patted dry with paper towel) and my NON-GF family members LOVED it. And since I wrote the original review I have been doubling the ricotta mixture and I like it even better.

Chocolate Trifle

Was yummy and our guests liked it. I think it was way too sweet, though (and I used unsweetened real whipping cream instead of Cool Whip). Next time I'd leave out the sweetened condensed milk and just make the chocolate layer out of whipped cream and melted chocolate (or maybe homemade pudding--not as sweet).

Turned out PERFECT (i.e. professional quality) the first time I made it. I think I baked it slightly less than recommended time and used 1 cup of whole wheat flour instead of 1.25 cups white. I also added chopped toasted almonds. YUM!! The second time, I used almond extract instead of anise & the toasted almonds again, but I think I chopped some of the almonds too fine (almost like adding extra flour) and it was dry and crumbly! OOPS. Stick sorta close to the recipe and you should be fine!

Outrageous Chocolate Chip Cookies

Maybe my expectations were too high due to the ratings for this recipe, but I didn't think it was anything special; I didn't like the non-committal flavor of the peanut butter. It is not something I will make again. To their credit, though, the cookies *look* delicious & impressive.

Beth's Spicy Oatmeal Raisin Cookies

I didn't really take the negative reviews seriously because of the 5-star rating, but I should have... The cookies have pretty good flavor, but a big thing for me is how food looks, too, and these do not look like something you'd want to eat. I would never make them to give away b/c they simply don't look appetizing. The spices are nice, but everything else about the cookie is undesirable, from the way it flattens and bakes unevenly to its appearance/texture. I am disappointed.
