Cranberry Sauce

OMG! This is the best cranberry sauce I ever had. I made it as some reviewers stated with 1/2 cup water and 1/2 cup orange juice, and a dash of cinnamon. This will make a regular annual appearance on our holiday table. Thanks for sharing the recipe.

Out of this World Turkey Brine

This is very similar to the brine I used for the whole and breast turkeys I made for Thanksgiving and Christmas last year. My family fell in love with the brine and smoking method it is now the only way I can make a turkey now. It is important to say that your turkey should be fully submerged in the brine. I did thaw mine first, rinsed and removed the gizzards, neck, and liver. Then placed in into the reynolds bag and was able to fit the whole bird in a large bowl in the refrigerator for 8-12 hours before smoking. When I removed it from the brine, I did rinse the salt off, but then added a few pats of butter and cajun seasoning and let it rest on the counter for 20 minutes before placing into the smoker. OMG, truly out of this world delicious.

Banana Crumb Muffins

Very Good Muffins. I usually have a hard time knowing what size bananas to use. The recipe seemed better with 1 1/2 cups of mashed bananas (three medium mashed). We really enjoyed the streusel topping although next time I may use a little less because they were kinda sweet. But I will def make again :)

St. Louis Toasted Ravioli

Tried these last night for dinner and Oh My Gosh! they are so addictive. Loved it. I used the beef frozen ravioli and added my own italian seasoning to my plain bread crumbs (so I can control the sodium). I used my fry daddy to fry each square. For the spaghetti sauce, I used Bertoli marinara with burgundy wine- so good. This recipe will definitely be used often as my kids loved it too. Thank you Barb, for sharing.

Granny Kat's Pumpkin Roll

This ia my first time making a roll cake, it was a huge hit at work. The only thing I did differently was to add pecans on top of the cream cheese frosting before rolling it up. Very tasty. I will make this again and again!

Brooke's Best Bombshell Brownies

Delicious flavor. I was prepared to see them done when being taken out of the oven. They will be under-cooked slightly. I put the pan back in the oven for ten more minutes. When cooled, it was a little too hard. Please adhere to the cooking instructions. Next time, I will and they will be perfect.

Cream Cheese Pound Cake III

This is a very delicious and flavorful cake. If you are looking for a soft moist cake- this is not the one you want to try. But for a traditional POUND cake, this is the perfect recipe. I made this one morning before the kids woke up for school, and my 5yr old was so excited by the smell, he had a slice toasted for breakfast (with milk of course!) It's been a hit at my house every since. I too use both vanilla and almond extracts because I love the blended flavors. A little sweet. But I wouldn't reduce the sugar by more than 1/2 cup. I have made this one a permanent pound cake in my home. Thank you Nanci for sharing.

Turkey in a Smoker

Ok i'm a novice. I tried my own smoked turkey this Thanksgiving for the first time and have vowed never to bake or fry a turkey ever again! This is by far the best way to have turkey. My family loved it. I let the 12 lb turkey sit in brine 8-10 hrs in the refrigerator overnight. Then in the morning, I set up my charbroil grill/smoker for low indirect heat. Then I rinsed the turkey and added garlic, pepper, and cajun seasoning, also butter under the breast. I used soaked hickory chips and a can of chicken broth as my liquid under the turkey. I let it cook until the charcoal and chips burned out completely-my first time, I didn't know I could add more charcoal and wood chips as needed. I wanted to make sure it was done, so I put it in the oven for about an hour covered with foil. OMG! Best turkey I ever had! Best flavor! I also smoked a whole turkey breast for christmas. Not a dry spot on either turkey. Very moist and juicy. The one reviewer who was concerned about the pinkish color might want to try a meat thermometer. Or simply bake covered for a hour. Some smokers and charcoals burn differently so it may take more or less time depending on size of turkey, type of charcoal and wood chips. But it's well worth a try. You will not be disappointed by the flavor!

Peanut Butter Cup Cookies

I tried these for the first time Christmas day and was pleasantly surprised by how delicious they were! We love peanut butter cookies and cups so perfect match in my opinion. I lined my mini muffin pan with small paper cups and used a cookie scoop to shape the dough into balls. Doing it this way, I had to cook them 12 min and as another reviewer suggested, I too let them cool in the freezer for 5 minutes after inserting the candy cups. I used both peanut butter cups and Chocolate Hershey Kisses. They also freeze very well. Good thing, or else I might eat a whole batch by myself!

Christmas Breakfast Sausage Casserole

We enjoy this casserole every Christmas and some special mornings throughout the year. The only change I make is to add more eggs btwn 6-8. Just remember to add the same amount of toasted bread slices and the ratio is perfect. I also used maple sausage for this past holiday and my family really loved it.

Ultimate Twice Baked Potatoes

I make this recipe often. The only thing I might do differently is put all the potato/cheese/bacon mixture into a casserole dish and add more shredded cheese on top. Saves time and my family loves it.

Beth's Spicy Oatmeal Raisin Cookies

Awesome!!!! I have tried these several times. I left all ingredients the same, Substituted 1/2 cup shortening with 1/2 cup applesauce; they are always wonderful. These cookies have turned one of my two year olds into a little cookie monster! Thanks for the recipe.

Chicken Enchiladas II

This is the best chicken enchiladas I have ever had. I goofed a little and added all of the ingredients together before separating to add milk and pour over the top: so I just saved some with the chicken already added and added a little milk to thin it out and poured that over the top with shredded cheese. Very delicious!! I will make this again and again.

Brown Sugar Meatloaf

This is my first time trying brown sugar with meatloaf. Everyone loved it. I used 1 lb ground turkey, 1 egg, onion and garlic powder, and omitted the milk. Also I mixed some of the glaze into the meatloaf. It was fabulous. This is my new staple recipe for meatloaf.

Downeast Maine Pumpkin Bread

This is sooooo good. I was able to please the taste buds of my two picky 17 month olds as well as my friends at work. The only change I made was that I added a teaspoon of pumpkin pie spice. Will definitely make this again. Thank you, LB for the recipe.
