Zucchini, Chicken and Rice Casserole

My family absolutely LOVED ths recipe! We have had it 4 times in the last couple of months and they seem to enjoy it more and more every time. I don't have the watered down issue everyone else seems to have though.

Creamy Split Pea Soup

It was delicious! I didn't use the bacon grease to cook the onion and celery but everything else I did exactly as mentioned! It was wonderful! My 77 yr old picky grandmother and super picky young kids all scraped their bowl and had seconds!!!! Totally a keeper!!!!

Cajun Chicken and Sausage Gumbo

OK... next time we will use only half the roux as originally called for. I scorched the first batch so my husband (from southern LA) made the second batch for me. We added a lb of okra towards the end. I was afraid of how much NuNu's to put in so used very sparingly... next time we will at LEAST double the 1/2t. we did use. We didn't use chicken broth just water. Also I was instructed (by hubby) to leave out the bay leaf therefore we just tossed in the already cooked chicken and simmered for the one hour. after the hour we had to add another 1 1/2 cup water.. it turned into something resembling gravy and after the water still a little too thick. But did smell delicious! I can't wait to make this again!!! Even my picky runts ate it up so definitely worth trying!

Italian Fig Cookies I

ok YES they make a LOT of cookies! I however am assuming I screwed up somewhere since I ended up adding the entire cup of water and the fig mixture was still completely solid (almost burning out my food processor). The only thing I think I messed up was not adding the orange peel in. Also I added the flour in without a problem and when I added the milk in... am I supposed to add it all in? Because after one cup it was literally soup in my bowl, so I added some more flour and kept my fingers crossed. They taste good even if the fig mixture was dry but not as good as fig newtons...

Charleston Shrimp 'n' Gravy

OMW!!! It was delicious! I followed the recipe exactly except for not having any seasoned salt but I did have tony's which is pretty much the same just spicier so I added a little less of that. It was so delicious I can't wait to eat it again! It is definitely going to be something we make often in our house, even my 2 picky eaters devoured it!

Potato Bacon Chowder

was so delicious but has definite room to grow. I made it exactly as called except sprinkling a little cheddar cheese onto each bowl. It was creamy, flavorful, and filling! I think next time I will omit the celery and trade the CO chicken soup for CO celery soup.

Cajun Style Stuffed Peppers

I made this as a compromise for me and my husband, I love stuffed peppers and he doesn't but loves cajun food (being from Louisianna) so I thought maybe this would be an in between. He LOVES them and they smell sooo delicious but unfortunately they were too spicy for me except for the pepper itself...next time I think I will try a different sausage and see how they turn out but this is the FIRST meal in 6 years my husband has said he wouldn't mind me making again HAHA!!

they tasted AWESOME I just kinda overcooked them and forgot to buy powdered sugar for the icing. I can't wait to make these again...just might make them tonight/tomorrow morning!

there was no flavor to the chicken and the veggies were a little too firm for our liking but at least they had a good taste...will probably try this again with a little tweaking

Gina's Lemon Pepper Chicken

I followed the recipe to the T. Wish I would have read everyones reviews before cooking it but there was no time as we were running REALLY late for dinner. It tasted okay and it only took the 30 minutes to cook the chicken but the flavor didn't really soak into the chicken.
