Garlicky Beet Delight

I didn't expect much from such a simple recipe, but the beets were delicious prepared this way. I used golden beets and served them over baby mixed salad greens. They were not only yummy, but looked beautiful, too. Definitely a keeper!

Roasted Fall Vegetables

Just ok. A bit greasy for me. The best thing about this recipe is that it's really easy. If I were to make it again I'd use fresh rosemary instead of dried and half the amount of oil.

Baked Mushrooms with Thyme and White Wine

Quinoa Pilaf

Quinoa is not only really, really, good for you; it's really, really good! This is an easy, delicious recipe that I will use again. The hardest part is chopping up the veggies. Took it to a pot luck and it was a hit. Thanks, Laura!

Steph's Summer Salsa

This was awesome! I made only a few minor changes to the recipe - I added salt and pepper and I used two seeded and chopped jalapenos in place of the banana chile. I served it for lunch with a green salad w/ miso dressing, sauteed onions and oyster mushrooms, and tofu with soy sauce and hot sesame oil. My boyfriend and I made "yummy noises" all through the meal. Thanks!

Excellent! Wonderful flavor and easy to make. My husband loved it - took the leftovers to work the next day for lunch. I used whole wheat pita, Persian cucumbers, and baby roma tomatoes (halved) and otherwise followed the recipe exactly. Will definitely make this again.

This recipe called for too much water, otherwise it was good and simple. After the bulgur absorbed as much water as it could, there was still a lot of water left in the bow. I drained it with a strainer. I may try it again and cut down the water to 2 cups.
