Vegetarian Moussaka

This had good flavor, but the labor was intense and the proportions were grossly inadequate for a 9x13 casserole. No where near enough to repeat layers, let alone create one complete layer of each. Grilling or broiling the vegetables will be a time saver next time. Using a smaller casserole or doubling all ingredients is a must.

Vegetarian Baked Pasta

Love it! I've made this many times and have tweaked it to my particular tastes. I use slightly less mushroom, add one zucchini and one red bell pepper, about half the gorgonzola in the recipe. The gorgonzola really does add something subtle and special. Combined with the portabello mushroom, who needs meat? Plenty of umami.

Shish Tawook Marinated Chicken

Dipping sauce was excellent. I would have liked more spice in the chicken marinade. I will definitely make it again. Served with Tabbouleh II from this website. The zing of the lemon in the tabbouleh was a very nice accompaniment to the chicken.

Grilled Fish Tacos with Chipotle-Lime Dressing

Loved the marinade. Didn't like the dressing. Had to bake in the oven because it's winter now but really enjoyed the flavor of the fish. I let it marinate overnight.

Eggplant Parmesan II

I've always made Eggplant Parmesan by frying before baking and found this alternative excellent. I don't think I'll ever make it the other way again. Plus it's less work because I don't have to do batches in my frying pan because largest my pan (13") isn't big enough fry all the eggplant at the same time. Skipping the frying made less mess in the kitchen overall, so I'm pleased with that as well. I did sweat the eggplant with salt before coating and breading and did have to bake it for 10 minutes to get it tender. I did miss the taste of olive oil infused in the fried eggplant, but it wasn't so obviously missing that I could easily get used to this new method.

Oven-Fried Catfish

Loved the idea of oven-fried, wasn't thrilled with the taste. I should have added more seasoning. So much of my coating was the cornmeal and we are used to eating blackened catfish with straight up heavy seasoning right on the fish (with no breading). Also, when we reheated the extra fish the next day, the cornmeal made a big mess in the microwave. But, still really liked the idea of this dish and it certainly had the appearance of breaded, deep fried fish fillets without the deep frying, so it might be right up your alley, just not ours.

Chicken Breasts with Balsamic Vinegar and Garlic

Chicken came out very flavorful and super tender. I used a meat mallet to thin out the thicker part of the breasts. Didn't do the flour coating. Used a high quality balsamic vinegar so I didn't have a problem with too strong of a vinegar taste when using all 1/4 C. Will definitely make again. Served over rice which soaked up the extra sauce.

Jamie's Cranberry Spinach Salad

Very good! Cut oil down to 1/3 C. Added blue cheese. Dressing was a bit sweet but still delish. I will definitely make this again.

Teriyaki Pork Tenderloin

I let mine marinate overnight and most of the day. After it was cooked, the intensity of the flavor at the ends (one of my favorite parts) was superb. Cooking time was perfect and pork came out very tender. Next time I make it I will try to leave more of the garlic pressed into the meat, just because I love garlic.

Lemon Garlic Tilapia

Very light. Great for a quick meal. If I were to make this again, I would add the parsley after the fish is cooked. I like the freshness of parsley. I had trouble "sprinkling" my garlic that I pressed through a garlic press. I got chunks of garlic over the fish. I would do what others recommend to saute the butter and garlic. Served with asparagus and a wild rice pilaf.

Savory Meat Loaf

This meatloaf was ok. Flavorwise it tasted fine. When mixing the meat I was a little concerned it was too mushy. After baking it firmed up a bit but was still pretty soft, and it was a little hard to figure out if it was fully cooked without using a meat thermometer. Overall, a very decent meatloaf.

Garlic Mashed Potatoes Secret Recipe

Fantastic! I was skeptical about making this recipe; I've never made mashed potatoes without milk. According to my husband, they were the best he's EVER had. I prefer a slightly thicker consistency to my potatoes, but the flavor was excellent. I boiled the garlic with the potatoes as other reviewers suggested. I also scaled it down to 6 servings. Next time I'm going to start with much less butter and add more if needed.

Fig and Lemon Chicken

The delicate sweet/sour-fig/lemon flavor would have been great but the recipe called for too many figs and the sauce and thus, the chicken, ended up being too sweet for my taste. The sauce was also pretty runny. Has potential but not sure I'll make it again.

Beans and Rice

I found this recipe after doing an ingredients search for things I had on hand. I wasn't particularly excited about making the recipe, but thought, what the heck. My husband loved it, but it's right up his alley with meat, beans, rice and onions. Me, thought it was so-so. I did not add a tablespoon of seasoned salt because it seemed excessive. I didn't have any green chiles, but will add them if I make this again.

Hot and Sour Chinese Eggplant

First time I made this I thought it was fantastic. Made it just as the recipe said but I added some thai basil at the end. Second time I made it I thought it was just average. Maybe I forgot an ingredient. Anyway, I will keep it in my recipe box.

Cajun Chicken Pasta

My husband really enjoyed this, however, I thought it was just ok. I made it with half and half and cornstarch to reduce the fat. I'll probably make it again but it won't be on heavy rotation.
