Scalloped Potatoes and Onions

Very simple and delicious! I just moved to the Middle East, and the stores don't have ingredients that other scalloped potato recipes require, like condensed soup and packet seasonings. This was very easy to prepare, and I was able to double it but still cook it in a pan the same size. Everyone loved it.

Gramma's Apple Bread Pudding

I used a TON of bread cubes, so the top was kind of crusty. The vanilla sauce was the perfect thing to to soften it. My roommates and I LOVED it.

Coconut Cake III

I think 4 minutes is way too long to mix the batter. My cake turned out a little tougher than I would have liked. But it's no matter. My roommate still said it was the best cake she'd ever had! The toasted coconut is SO pretty, and the texture is great, too!

Chicken Enchiladas I

Easy to make, and it serves so many people! We added about a cup of frozen corn, an extra bell pepper, and a 15-oz. can of black beans. It was delicious AND healthy.

Mandarin Orange Cake I

This recipe was good, but it didn't taste like anything special. I probably could have made a normal yellow cake, topped it with cool whip, and tasted little difference. Although, it did taste a little more orangey after chilling in the fridge overnight. My roommates liked it a lot. Note: the recipe makes a TON of topping!

Triple Layer Cookie Bars

SO DECADENT! It's sweet, chewy, and delicious, but you can't have too much at once because it's just SO HEAVY. I love it because it's not your average, boring cookie. TIP: one wrapped package of graham crackers (one box usually contains 2 wrapped packages) yields exactly 1.5 cups when crushed into crumbs!

Awesome Carrot Cake with Cream Cheese Frosting

It truly is awesome. In case you're wondering, 3 cups grated carrots is 6 or 7 large ones. (I was wondering how many to buy.) I took other reviewers' advice and only used 1 cup of oil, and it was still plenty moist. I sprinkled flaked coconut on top of the cream cheese frosting, and it looked and tasted great.

Pat's Award Winning Carrot Cake

Everyone loved it! I was weirded out by the baby food, but it makes total sense, and the cake really WAS insanely moist. I LOVE the coconut in the batter. If you're making this cake, I hope you know that cream cheese frosting is always implied with carrot cake! Baby food is expensive, though, so I probably won't make this that often.

Slow Cooker Italian Beef for Sandwiches

So delicious and tender! We drizzled the juice over the shredded beef, like au jus. It's good served with roasted peppers and onions. Watch out: 3 cups was way too much liquid for our slow cooker, and it spilled over! 2 cups of water is sufficient.

Apple Ugly Cake

I took another reviewer's advice and added a cup of liquid (milk) to the batter. The top was deliciously crunchy/chewy. I don't even like raisins, but I LOVED them in this cake! I might try it with dried cranberries instead of raisins next time. That sounds like it'd be nice and tangy.

My sister and I used a whole Andes mint atop each cookie and just barely spread it around, so there were some green swirls on top. A treat to look at, as well as eat!

Apple Turnovers

These are terrible if you eat them warm. The puff pastry is hard and flaky. The recipe wasn't kidding about making sure they're cooled completely. I thought these were terrible fresh, but wonderful the next morning.

Hot Artichoke and Spinach Dip II

I brought this to a potluck with 2 baguettes, sliced up. It all disappeared fast! You can't have too much of this, though-- it's SO rich! I used a full 10-ounce package of frozen, chopped spinach because I wouldn't know what to do with the remainder if I only used half a cup. It worked out fine!
