Banana Cream Pie I

I can't believe I made pudding from scratch! My pie shell was too small to fit all this, so we chilled the excess filling and ate it with chocolate chips. Heavenly!! This pie is especially tasty in a Nilla crumb crust, topped with homemade whipped cream! I will DEFINITELY make this again!

Colleen's Slow Cooker Jambalaya

I thought jambalaya was a laborious dish, but this was SO easy! The level of spiciness is perfect. Make sure you really wait until the END to stir in the shrimp. I thought it'd be nice to have everything ready when I got home in the evening and let the shrimp slow cook for HOURS... it didn't have that characteristically crunchy, shrimpy texture. Some fun ideas for add-ins: okra, corn, kidney beans... yum! Thank you, Colleen!!

Thai Sweet Sticky Rice With Mango (Khao Neeo Mamuang)

SO tasty and simple! This serves WAY more than 4-- maybe 6? We didn't have enough coconut milk to make the sauce, so we didn't make a sauce, and the dessert was perfectly sweet as is. Sweetened condensed milk is tasty on top, but not necessary. The rice has a great flavor.

Creme Brulee French Toast

So rich and easy! I needed more than 6 slices of french bread to fill my 9x13 dish. I used about 12! This is great with a sprinkling of cinnamon and a dollop of homemade whipped cream.

Dump Cake V

This is very quick and easy. It's great that it requires virtually no washing or measuring. But you get what you put into it... the canned fruit was overly sweet, and all that butter just coats your mouth. It's convenient but not that tasty.

Cathy's Creamy Chicken Bake

Easy, impressive, and delicious! The crispy topping is great! Any type of cheese works well. I'd recommend sprinkling a bit of black pepper on the breasts before adding the cheese, but no need to season with salt-- the cheese and stuffing are already salty. Some sliced mushrooms would be good on these breasts, too! Great with broccoli.

Oven Fried Chicken IV

Not as crispy as I would have liked. And even though it's oven-baked, instead of fried, I think the huge amounts of sour cream don't make it *that* much healthier than deep-fried chicken. The herbs do add an interesting dimension to this atypical fried chicken! Will definitely make again, but not often.

Russian Mushroom and Potato Soup

Delicious and easy! I halved the salt, and it was still plenty flavorful (perhaps because I used normal-sodium chicken broth). My only complaint is that I severely scalded my mouth, eating this ambrosial soup too quickly!

I took many reviewers' advice and doubled the crust. It was tasty and sturdy enough to be eaten without a plate and fork. It's a lot like pumpkin pie filling atop a Nature Valley granola bar.
