Hello from Illinois! Working full-time as an Office Manager for an excavation contractor and diligently trying to keep up with household demands, leaves me little time to indulge in my love of experimenting with new recipes. Summer time brings time spent at the lake for much needed relaxation. Working everyday I am always in pursuit of quick, easy, and delicious main dishes to prepare. On my days off you will find me feeding my heart's desire of preparing delectable desserts. I love trying new recipes to add to my treasured collection. I am always elected to make dressing at Thanksgiving and Christmas. In Addition to the dressing, it is always requested that I make my super double cream cheesecake. Thanksgiving day gives me the opportunity to make a variety of dishes to go along with the turkey. Making that fabulous meal is a triumph every year :) Getting in too much of a hurry and removing a cheesecake from the oven way too soon and having it literally fall to pieces on me! I had to bake another one and I was up until the wee hours of the morning as not to disappoint the Thanksgiving meal.
