Make-Ahead Hot Buttered Rum Mix

Feta Cheese Ball

I have made this several times and everyone loves it. I usually increase the amount of feta because my family likes lots of feta and garnish with paprika. I have frozen the second ball wrapping it in press-n-seal. You would never know that it had been frozen. Always good to have something in the freezer to pull out when short on time to take to a friend's house.

West African Vegetable Stew

I love this recipe. I have made it several times. I usually substitute butternut squash for the sweet potato and use canned tomatoes instead of fresh. I have substituted swiss chard and kale for the spinach depending on what I have on hand. I leave out the red pepper because I do not like spicy foods. I also frequently add some cooked chicken or pork to increase the protein. It is very flexible recipe and delicious every time I make it. So healthy and low calorie.

Curried Rice Mix

Very tasty. Nice combination of sweet with curry. I am making this to give as gifts. I am using pint jars so I halved the recipe and only used 1/4 cup of almonds. I also used brown rice. With the brown rice increase the water to 3 cups and cook 50 minutes and let stand 5 minutes.

Mainely Fish

I have made this several times and it has been great each time. I do follow the recommendation of another reviewer and place it on a bed of fresh spinach sprinkled with a little salt. I have made it with trout, salmon, and mahi mahi. I have made it with pre-seasoned fish from Costco and left out the olive oil. Make sure to not over cook or the spinach gets overcooked. This recipe is in our regular rotation of food. Thanks for sharing this recipe.
