Pumpkin Bread IV

Made this with no oil, sub the applesauce and it works great! Loved the flavor but be warned, you have to have a big bowl to mix this in!

This was so good!! I served it with Cucumber-Mango Salsa over lemon dill rice, and it got the best reviews at dinner time! I wish I had pressed the liquid out of the imitation crab I used though and chopped it up, it was too mushy although it held together when I cooked it.

Cucumber-Mango Salsa

I absolutely LOVED this salsa! Served it over crab cakes with lemon dill rice. I thought the mango I used wasn't ripe enough but it was perfect; not mushy. The jalapeno (seeded) didn't make my salsa hot at all. I was happy! I think I'll add more lime juice though, or even lemon juice next time.

Lemon Dill Rice

Garbanzos with Fennel

I love this! It has such a nice home-made taste, and something that I'd pay for at a restaurant. It did make too much though, so I'll half it next time since my kids won't eat this (only the required bite to try it). My first time cooking with fennel and found a youtube video easily on how to cut it up. I bought fresh basil and am glad I did, it was wonderful! This is a perfect addition as a side to a meat or alone with bread.

Mock Tuna Salad

I can't believe how good this is! I only added relish and mayo since that's all I had, and it was very much like tuna. It will taste even better with the onion and lettuce on the sandwich. This is my new favorite healthy meal!

Butter Beef

Holy Cow, this is so good!!! I hated staring at the cube of butter in my crock pot; so unhealthy. But stuck with the recipe. I did brown the meat before cooking all day on low. The meat was so tender and flavorful!!! I will half the butter next time though, I think it will be just as good. This is a rich and satisfying meal. Yum!

Shrimp Scampi Bake

I love shrimp, so this was a great recipe! I haven't baked it before, always pan fried. I think you have more control over doneness in a pan, but this was easy. I halved the butter and still had tons of sauce in the end for over veggies or pasta.

Candy Apple Salad

This is a delicious sweet salad with easy ingredients. I didn't think the flavor from the sugar/vinegar/pineapple would be that noticeable, it doesn't make very much. But wow, a caramel flavor does come of it! I do think small apple pieces are the way to go and also added the mini marshmallows to the top and drizzled on caramel sauce. Looked very nice on the table for the holiday. Try this one!!

Cheese Fondue

I think I'm partial to the recipe for Cheese Please Fondue with ranch flavoring. I was really excited to try this, but was frustrated with the grainy texture which I tried so hard to avoid by using lemon juice and stiring the cheese in well. I read Alton Brown's review on fondue and I think the key is LOW TEMP after adding the cheese. Still though, the flavor of the ranch in fondue was my favorite and complimented the french bread and vege sticks so much better.

Cheese Please Fondue

This is so good!! I mistakingly added dry ranch flavoring and loved the flavor (1/2 packet for this recipe). My guess is that it's not as subtle as other reviews said. My favorite was french bread and carrots dipped in. Kids loved it!

Potato Salmon Patties

This turned out just as wonderful as the reviews said! I used tuna instead of salmon since I had it on hand, and 1 potato mashed after I did a quick cook in the microwave and peeled it. Baked patties in a muffin pan at 350 for 35 minutes and served with a hollandaise recipe from this website. This is one I would make for company because it was so easy and presented beautifully next to a salad. Give it a try!

This was my first time making this and it was wonderful!! I made it to go on the Potato Salmon Patties and my whole family went crazy over it. Loved the reviews that said to wisk the egg in the pan before it gets warm.

Angela's Awesome Enchiladas

I did what others suggested, add the seasoning in with the chicken crockpot, then fill tortillas and add sauce. SO good! I loved the green enchilada sauce much more than the red, as did my kids.

Yummy Chocolate Chip Oatmeal Cookies

My review is based on the fact I forgot to add 2 cups of butter. I only added 1 cup. The cookies were fluffy and so good I didn't notice until after they were done. They aren't as moist as they would with all the butter, but I'm okay with that. They taste great!
