Squash Casserole I

My hubby made this a couple of nights ago. Seriously delicious! He doubled the recipe and drained the water, but otherwise made no changes. We all loved it with BBQ'd chicken, and I have been eating it for lunch and dinner ever since. It's almost gone so we bought the ingredients last night so he can make it again. Thanks for a great recipe Gayle!

Chicken Enchiladas II

This is a great recipe. Easy and just like enchiladas suiza. I only give it 4 stars, because I would have liked more sauce. That being said... I think it is a shame that people will completely change a recipe then review it. ie: "it was good but I made these changes" It's not the same recipe people and you cannot honestly review a recipe that you haven't even tried. Just saying.

Pumpkin Cheesecake

It is only fair that I mention that I do have a huge sweet tooth and usually make very rich and sweet desserts. The texture and presentation of this is wonderful, but if I were to ever make this recipe again I would double the sugar, especially in the sour cream topping, and add more of the spices. My sister suggested that drizzling it with caramel sauce might help. I agree. But if you don't mind only mildly sweet desserts then this would probably be fine for you, for me it just was not even close to sweet enough.

Peanut Brittle

Very good and easy. I could not find raw peanuts so I used regular canned, salted, spanish peanuts and they worked fine. WARNING! This foams up a lot! Use a pan that will allow your contents to at least double without spilling over. I also sprayed the foil with cooking spray and used the spread out and break apart tecnique. Yummy Stuff. I am making more to give out for the holidays.
