Haluski - Cabbage and Noodles

The recipes makes a lot, but can be easily halved for those occassions where you are not feeding 20 people. It is, however, very good.

Hearty Turkey Stew with Vegetables

Reviewed: Dec. 1, 2013
Great use for leftover turkey. I substituted a turnip for one of the potatoes and added an extra carrot and celery stalk.

Healthier Broiled Tilapia Parmesan

Reviewed: Jun. 24, 2013
Very good. I omitted the mayo b/c it seemed like it would be too greasy. I would definitely make this again.

I made this with shitakes and put it over salmon. Excellent! I wouldn't change a thing.

Delectable Marinated Chicken

Reviewed: Jul. 29, 2012
Very good. I ended up baking it b/c we were experiencing a sudden downpour and couldn't get to the grill, but it was still excellent.

Sweet and Sour Tofu Veggies

Reviewed: Jul. 29, 2012
Very good. I left out the mushrooms, beans, and zucchini for a more Chinese restaurant feel. Leaving these out also yielded more sauce.

Like other reviews say, it's a bit on the sour/tangy side.

Rice with Summer Squash

Reviewed: Sep. 27, 2011
I recommend chopping the squash fairly small in order for it to tenderize quickly.

Low Fat Apple Bran Muffins

Reviewed: Sep. 27, 2011
They are a little bland, even after adding a tsp. of vanilla and cinnamon. I used 1 whole egg instead of 2 egg whites. I also added raisins for some more sweetness.

Chili-Lime Chicken Kabobs

Didn't change anything, but I let the chicken marinate for about 10 hours, which made it very tender.

Coconut Rice with Black Beans

Reviewed: Aug. 24, 2011
I made a few changes - I used all coconut milk instead of water, which made the rice very creamy; substituted onion for the shallot b/c I didn't have one on hand; and added salt for a little more flavor. Overall, it is very good and I make it again.

The absolute best chocolate chip cookies. This recipe has become my standard. I usually use cheesecake flavored instant pudding. They also freeze pretty well too.

Green Bean and Portobello Mushroom Casserole

Reviewed: Dec. 10, 2006
I used fresh green beans instead of canned, which makes a huge difference. I topped the casserole with cheddar flavored fried onions to get the best of both worlds. I think was a little much. Next time I would just use the plain onions.

Frozen Pumpkin Pie

Reviewed: Dec. 10, 2006
Excellent pie. Because I love pumpkin I only added 1 cup of cool whip for a really powerful pumpkin flavor. Doing that also made all of the ingredients fit perfectly into the pie pan. My only complaint was that the ice cream got a little icy. Any suggestions to remedy that for next time?
