The recipes makes a lot, but can be easily halved for those occassions where you are not feeding 20 people. It is, however, very good.

They are a little bland, even after adding a tsp. of vanilla and cinnamon. I used 1 whole egg instead of 2 egg whites. I also added raisins for some more sweetness.

Coconut Rice with Black Beans

I made a few changes - I used all coconut milk instead of water, which made the rice very creamy; substituted onion for the shallot b/c I didn't have one on hand; and added salt for a little more flavor. Overall, it is very good and I make it again.

Award Winning Soft Chocolate Chip Cookies

The absolute best chocolate chip cookies. This recipe has become my standard. I usually use cheesecake flavored instant pudding. They also freeze pretty well too.

Green Bean and Portobello Mushroom Casserole

I used fresh green beans instead of canned, which makes a huge difference. I topped the casserole with cheddar flavored fried onions to get the best of both worlds. I think was a little much. Next time I would just use the plain onions.

Frozen Pumpkin Pie

Excellent pie. Because I love pumpkin I only added 1 cup of cool whip for a really powerful pumpkin flavor. Doing that also made all of the ingredients fit perfectly into the pie pan. My only complaint was that the ice cream got a little icy. Any suggestions to remedy that for next time?
