Microwave Oven Peanut Brittle

Well, I have to admit that I was suspicious that something so good, could be so easy...but it was! My Husband is a diabetic, so I replaced the sugar in the recipe with "Splenda Granular" and I used the salted and roasted peanuts that you can buy at Costco and omitted the salt in the recipe. I spread it out on a silipat covered baking sheet which worked great and I also used a glass measuring cup like many people recommended. My Husband happened to buy me some peanut brittle for Christmas and when we did a comparison, this one was by far, the better of the two. The peanut to brittle ratio is much better and it tastes more like peanuts...the store bought is much sweeter tasting. And I just let all of the dishes soak in hot soapy water and clean up was a breeze!

I had the pleasure of going to Germany several years ago, and this brought back some wonderful memories of that trip. This recipe is absolutely fantastic! My Husband is a diabetic, so I replaced the sugar with "Splenda Granular" and the recipe turned out great! Thanks for sharing your recipe Else!

Pumpkin Spice Cookie

After reading some of the other reviews, I added 1/2 tsp. pumpkin pie spice, 1 cup chopped walnuts and 1 cup chocolate chips. I used a size 40 cookie scoop and baked them for 15 minutes. These cookies have been a huge hit! One of my friends has tasted dozens of different types of cookies that I've made, and she told me she thought this was the best thing I've ever made! These are super delicious and super easy...a definate keeper!

Cassie's Zucchini Brownies

Great brownies! My Husband is a diabetic, so I substituted Splenda for Baking for the sugar. I also added 1 cup of chocolate chips, like a lot of the other reviewers did. Great way to use up some extra zucchini! Would definitey make again and recommend to others!

Best Apple Crisp Ever

I've got to tell you, that this is the worst recipe for an apple crisp that I've ever tried. I agree with one of the other reviewers, that this recipe should not have made it to the "All Recipes Tried & True Favorites. I've learned the hard way, that one should check the reviews. But I thought that since this recipe was in All Recipes "top 300 recipes" that I was safe and didn't need to check the reviews...boy was I wrong. I knew there was a problem when the recipe said the topping was supposed to "spread evenly over the apples", because what I had was a congealed ball of dough, that I had to rip into little bits and drop on the apples. And when it baked, they turned into little rocks. My Husband, being the sweet man he is, didn't complain, but he had to drown it in milk, to make it edible. I now know, to always and I mean always check the reviews before trying a recipe!

Pumpkin Muffins II

These muffins were great! My husband is a diabetic, so when I saw the total carbs per muffin, I knew that I had to make some changes. I replaced the 2 cups of white sugar with 1 1/2 cups of Splenda Granular (the one that measures cup per cup like sugar... not the new Splenda Blend... haven't tried that one yet) and 1/2 cup of regular white sugar like the recipe calls for. I also added an extra 3/4 teaspoon of baking soda to compensate for the Splenda. Everything else was the same and now they are only 33 carbs each instead of 59 (carbs minus fiber). They have a great spice taste to them too! Will definitely make them again!

Jumpin' Java Cookies

The cookies themselves are very good in flavor, everyone really likes them. My husband is a diabetic, so I used 1/2 brown sugar and 1/2 Splenda brown sugar (1 cup Splenda plus 1/4 cup of molasses or sugar free maple syrup=1 cup of brown sugar and I used the molasses). The dough was very soft, so I refrigerated it as another reviewer had suggested, I did it for a couple of days only because of time constraints and the dough was still OK. The cookies ended up roughly 2-inches in size and I had 96 cookies (with a size 70 cookie scoop) instead of the 36 the recipe said it would make. I'm thinking if you only made 36 cookies they would be Shrek size! If anyone has made these, could you please put in your review how many you made... just curious.

Surprise Muffins

First off, I should note that I made these before the recipe was fixed... baking soda was not listed and baking powder was listed twice. I had a problem with the bottoms being overdone, but I also probably put less than 1/2 of the batter into the pans before putting in the jam, since the review that I read, had a problem with jam oozing out and I didn't want that to happen. I used apricot jam and the basic flavor was good. I think I will try them again, putting a little more batter in the bottom of the pan and using the revised ingredients may help too!

Strawberry Cobbler I

This cobbler was great! After reading the other reviews, I also cut the water to 1/2 cup and it worked just fine. I made it once with 4 cups of berries and a second time with 6 cups of berries, and both were fine. The one change I did make, is that I substituted "Splenda Granular" for all of the sugar, because my husband is a diabetic. It turned out great both times... you'd never know that it wasn't real sugar in the recipe!

Gel's Green Beans and Beef

My husband and I both loved it! It is spicy and somewhat hot from the ginger and pepper, but very tasty. I used snap peas instead of green beans and served it over white rice.
