Chicken Noodle Salad with Peanut-Ginger Dressing

Delicious! I made just a little bit more sauce to make it saucier and left out the ginger since I didn't have any. This is going to be a perfect summer pasta salad! I might even try to adapt it as a warm dish too.

Chipotle Crusted Salmon with Triple Berry Sauce

I used the marinade on both salmon and chicken, loved it on both. I used a wildberry jelly that I had on hand and it turned out great with the salmon. I really like the spicy-sweet combination.

Honey Baked Chicken

New York Cheesecake III

I would give this recipe a 4 for flavor, but it did not turn out well otherwise. I followed the directions EXACTLY, and the middle of the cheesecake turned out like pudding, NOT done at all! Since the recipe said not to worry if the middle turned out a little jiggly I figured that it would be just fine. Wrong. I didn't want to waste it all so I ended up putting it back in the oven't (it couldn't be any worse I figured), it did end up baking all the way though eventually but the texture was a bit off, probably because of the screwed up baking rounds.

Boilermaker Tailgate Chili

I doubled the recipe (made a huge pot for a pumpkin carving party). The only thing I changed was adding once packet of chili seasoning and not using as much chili powder, and added a few diced canned chipotle peppers in adobo sauce. I also just used some Italian diced tomatoes instead of adding basil and oregano. I let it simmer on the stove for a while to reduce and meld the flavors. My favorite chili recipe, will make many more times, thanks!

Margarita Cake with Key Lime Cream Cheese Frosting

I made these for my boyfriend's birthday since he loves margaritas. Turned out great! I couldn't find any frozen margarita mix, so I just used a blend of some pre-made mix with alcohol in it and frozen limeade concentrate. No problems with consistency of cake or frosting. I made cupcakes and there was extra frosting left over, but I still wouldn't change the amounts since I don't need a chunk of left over cream cheese sitting around. I topped with decorator sugar to look like salt and a small lime wedge. Super cute and tasty!

Cabbage Roll Casserole

I altered the measurements and added some more seasonings based on what I had sitting around, and I substituted ground turkey for the ground beef. I also just made it in a big pot on the stove. Quick, easy, healthy, and hearty. Makes great leftovers, too!

Mint Chocolate Cookie Crunch

I added a bit of crushed candy canes and doubled the peppermint extract, delicious. I also did half batch with semisweet chocolate and the other half with white chocolate, both were great.

Lemon Crisps

At first I wasn't sure how I felt about the lemon flavor, but after a few cookies I was hooked. Definitely a nice change from your typical cookie recipes. I think that I will also experiment with other cake mix flavors - maybe confetti cake!

Chocolate Banana Bread

I used half white sugar and half brown sugar, half sour cream and half cream cheese, and substituted peanut butter chips for the chocolate chips. I also covered the top in brown sugar before baking. Delicious!

Asian Coleslaw

Used two bags of premade coleslaw mix to save time instead of slicing the cabbage myself and I only added about 1tbsp of oil. I also added sunflower seeds and about a cup of crushed pineapple. Great new coleslaw, thanks!
