Chipotle Honey Roasted Peanuts

Reviewed: Jun. 21, 2014
Great honey roasted peanut recipe! I left out the other spices and just tossed with the sugar. I will definitely be making these again to use up the 10lb bag of blanched peanuts I bought!

Our Favorite Balsamic Vinaigrette

Reviewed: Apr. 6, 2014
I scaled it down for a single serving and left out the garlic since I didn't have any at the time. Quick, easy, and tasty. Perfect for weekday salad lunches!

Bacon, Egg, and Cheese Strata

Reviewed: Mar. 23, 2014
Great base recipe for a breakfast bake. I used whole milk instead (what I had on hand). Added some salt, pepper, and dried parsley to the egg mix. Also used whole pound cooked and crumbled bacon, left out mushrooms, and added sautéed onions and bell peppers. I will definitely be using this base in the future. Will try sausage, ham, and other veggie combinations. I will be using 1lb of whatever meat I use though (1/4 cup is definitely not enough!). Easy to tailor to your own taste. Guests loved it. Thanks!

Very quick and easy, followed directions exactly. Will make again for easy homemade pizza. Next time I might try adding some seasonings to the dough as others suggested.

Shepherd's Pie

Reviewed: Nov. 5, 2013
I have been looking for a quick and tasty Shepherd's Pie recipe and this is it. Great comfort food. I did modify a bit based on preference, it was excellent. Instead of cream of celery I found Campbell's Beef and Mushroom soup and used that, I think that was the perfect addition and made a nice creamy and beefy gravy. I omitted the can of mushrooms, added a small onion, and substituted a 16oz bag of frozen mixed veggies instead of canned. I also added some shredded cheese and milk to the mashed potato topping. Will definitely keep this in the fall/winter rotation! Thanks!

Buckeye Balls II

Reviewed: Jan. 6, 2013
Too dry at first, had to add more peanut butter and butter. However, after that they were great. Really easy to make, best when kept in the fridge. Everyone loved them.

Easy Apple Crisp

Reviewed: Oct. 15, 2012
By far the easiest crisp recipe I have used. I did tweak it just a bit though. I used more apples (enough to fill the 9x13 pan, and I had smaller apples), apple cider instead of water because I had it on hand, threw in a bag of baking caramel bits, and added some oatmeal to the topping. Super delicious, this will be my go-to recipe from now on!

Chicken Noodle Salad with Peanut-Ginger Dressing

Reviewed: Apr. 5, 2012
Delicious! I made just a little bit more sauce to make it saucier and left out the ginger since I didn't have any. This is going to be a perfect summer pasta salad! I might even try to adapt it as a warm dish too.

Chipotle Crusted Salmon with Triple Berry Sauce

Reviewed: Mar. 6, 2012
I used the marinade on both salmon and chicken, loved it on both. I used a wildberry jelly that I had on hand and it turned out great with the salmon. I really like the spicy-sweet combination.

I used dijon mustard instead of regular yellow mustard, and added just a little bit more. Delicious! Will definitely be making this one again.

New York Cheesecake III

Reviewed: Jan. 1, 2012
I would give this recipe a 4 for flavor, but it did not turn out well otherwise. I followed the directions EXACTLY, and the middle of the cheesecake turned out like pudding, NOT done at all! Since the recipe said not to worry if the middle turned out a little jiggly I figured that it would be just fine. Wrong. I didn't want to waste it all so I ended up putting it back in the oven't (it couldn't be any worse I figured), it did end up baking all the way though eventually but the texture was a bit off, probably because of the screwed up baking rounds.

Boilermaker Tailgate Chili

Reviewed: Oct. 31, 2011
I doubled the recipe (made a huge pot for a pumpkin carving party). The only thing I changed was adding once packet of chili seasoning and not using as much chili powder, and added a few diced canned chipotle peppers in adobo sauce. I also just used some Italian diced tomatoes instead of adding basil and oregano. I let it simmer on the stove for a while to reduce and meld the flavors. My favorite chili recipe, will make many more times, thanks!

Camp Cornbread

Reviewed: Oct. 31, 2011
Made this last night with chili. Only used 1/4C sugar as suggested by others. Creamed corn only came in 14oz cans so I just used a little less than the whole can. Also used glass pie dish. I really think 9x13 pan would be way to big for a single batch. Cooked 35min, turned out great. Super soft and fluffy. This will be my go to cornbread recipe from now on, thanks!

Margarita Cake with Key Lime Cream Cheese Frosting

Reviewed: Jul. 27, 2011
I made these for my boyfriend's birthday since he loves margaritas. Turned out great! I couldn't find any frozen margarita mix, so I just used a blend of some pre-made mix with alcohol in it and frozen limeade concentrate. No problems with consistency of cake or frosting. I made cupcakes and there was extra frosting left over, but I still wouldn't change the amounts since I don't need a chunk of left over cream cheese sitting around. I topped with decorator sugar to look like salt and a small lime wedge. Super cute and tasty!

Cabbage Roll Casserole

Reviewed: Mar. 20, 2011
I altered the measurements and added some more seasonings based on what I had sitting around, and I substituted ground turkey for the ground beef. I also just made it in a big pot on the stove. Quick, easy, healthy, and hearty. Makes great leftovers, too!

Mint Chocolate Cookie Crunch

I added a bit of crushed candy canes and doubled the peppermint extract, delicious. I also did half batch with semisweet chocolate and the other half with white chocolate, both were great.
