Chili Rubbed Pork Tenderloin With Apricot Ginger Glaze

Rave reviews even from my kids! Sweet, spicy (but not too hot) and savory. I took the recommendation of others and seered the meat in my cast iron skillet, covered it in foil and baked at 300 until the internal temp was 160. (appx 1hr) I served it with the onion rice recipe from this site and added cilantro to the rice recipe.

Adrienne's Cucumber Salad

Really good, very close to what my grandmother used to make and can. The name "salad" is a little misleading. It is more of a "pickled" or "marinated" cucumber. I also agree with another reviewer. It is a MUST to salt the cucumber for appx 1 hour to draw out the moisture. Make sure you rinse the salt off with really cold water. You do not want the cucumbers to "wilt" before you pour in the vinegar mixture. I also recommend popping the mixture into the freezer to bring the temp of the vinegar down quicker.

Mexican Rice II

Delicious! I followed the advice of someone else and added my own homemade taco seasoning instead of just cumin and garlic salt. Came out perfect. I added leftover corn and black bean salsa to 1/2 of the rice for the adults. I served it with grilled beer and lime chicken and ice cold Corona's. Perfect summer time meal!

Buffalo Chicken Dip

Easy and Delicious! I substitute cooked chicken breast for the canned chicken and use blue cheese dressing instead of ranch. I put all ingredients in my Pampered Chef 2 quart mixing bowl and microwave for about 2 minutes (until everything is melted) stirring half way between and then transfer everything to my crock pot. Serve with crackers, corn chips or celery and carrots. It's always a hit and always gone fast!!!

Rich Chocolate Brownies

The icing on this brownie makes it worth 5 stars! I used french vanilla instant coffee instead of regular instant coffee. It doesn't give it a coffee taste but instead it enchances the cocoa flavor. I also followed others who suggested substituting an extra egg instead of the baking powder. I also used half white sugar and half brown sugar. That really made the brownie rich and decadent. I doubled the recipe and cooked in a 13 x 9 inch pan. It made appx. 24 brownies. I sent half with my husband to work. Everyone in his office has a big smile on their faces this morning!

Buffalo Style Chicken Pizza

Really good recipe! I used my own homemade blue cheese dressing and spread just enough to cover the crust. I also added sliced red onion and a mixture of grated sharp cheddar and montarey jack cheese. It's now a weekly request at my house!!!

Slow Cooker Beef Stroganoff I

I am only giving the orginal recipe a 4 b/c it needed a few things added to it. I agree with the other reviews it needs the sour cream to give it the right "tang" and the addition of fresh sauteed mushrooms and Lipton onion soup really helped with the flavor. All in all pretty good. It won over my 6 year old son who usually doesn't like anything!

Awesome Slow Cooker Pot Roast

I took this to a gathering last night and it got rave reviews. The gravy was absolutely delicious and the meat was extremely tender. I added diced Vidalia onions and fresh mushrooms to the crockpot and it turned out delicious!

Chicken Tortilla Soup V

I gave the basic recipe only 4 stars because I had to make a few changes. I didn't saute the chicken before addding it to the soup because I prefer shredded chicken. I put whole boneless chicken breasts and all of the ingredients into the crockpot and cooked for about 8 hours on low. We added black beans and cilantro just for a little more flavor. It came out perfect. My 2 year old even asked for seconds! Bonus: This soup freezed wonderfully for a quick lunch and dinner.

Get a Husband Brunswick Stew

This is a really good Brunswick Stew. I substituted a shredded pork tenderloin (I cooked it in the crockpot with liquid smoke, worstershire sauce and garlic cloves for about 5 hours on high) because there wasn't any ground pork available at the grocery store. Other than that I stuck to the recipe and it turned out fantastic. Will definately make this again. Bonus: It freezes wonderfully for those quick lunches or dinners!

Haystacks II

This recipe is so easy and is great for getting my kids involved in cooking. I omitted the peanuts b/c my daughter is severly allergic to them. I added a few more ounces of chow mein noodles to the chocolate and butterscotch to take the place of the peanuts. Delicious!!!

Apple Crisp IV

This recipe was easy and delicious. I scaled the recipe down by half. It made the house smell absolutely wonderful! I followed some of the recommendations suggested by some of the others and it turned out perfect. I tossed the apples in vanilla and cinnamon sugar and added a little more cinnamon and brown sugar to the crust.

Slow Cooker Chicken and Dumplings

As a "girl raised in the south" (AKA GRIT), I grew up with my Granny's from scratch chicken-n-dumplins'. These were the closest thing I have come to her recipe. I followed a couple of the recommendations that some of the others suggested: 1)Use chicken broth instead of water 2)Roll the biscuit dough flat and cut into thin strips 3)Mix the dough into the shredded chicken and gravy 4)Add the dough roughly two hours before ready to serve and add more chicken stock if necessary 5)Add fresh ground black pepper just before serving

Skillet Pork Chops with Potatoes and Onion

Easy and delicious. I have tried this several times with pork chops and they are tender and moist everytime. Last night I tried this with boneless chicken breasts and it turned out delicious. I added a little garlic powder and parsley to the parm. cheese mixture just to add a little more flavor.

Pesto Chicken Florentine

My husband hates spinach, but loved this dish. I cut the baby spinach into small confetti pieces and he never knew it was in there until he finished. The pesto and alfredo make a great combination, but the flavor of the leftovers were a little strong.

Chocolate Chip Cookie Pie

I made this for my husband (who is a self confessed chocoholic) and he loved it. I served it warm with vanilla ice cream. I found that using butter instead of margarine makes a big difference in the pie filling and the end product.

Artichoke and Sun-Dried Tomato Chicken

This is a very easy meal and full of wonderful flavors. After browning the chicken, I cut it into pieces before adding it back in to the skillet. I served it with bowtie pasta and a spinach salad. My husband loved it!
