Libby's® Pumpkin Roll with Cream Cheese Filling

I use Cookingfor7's suggestion for adding more spices and it's the best I've ever tasted. I also plan ahead for the holidays and make 5 at once. One large can of pumpkin will make exactly 5 rolls, so I measure out my dry ingredients ahead of time into small plastic containers. Then, I get my mixer out and mix the wet ingredients, one batch at a time, and reserve a bowl to dump the wet and dry ingredients into, so that I have an assembly line operation going. Since this recipe is a bit time consuming, it makes sense to make several at once to share. They don't last long at our house, so by the time I make one or two for the neighbors and one or two for work, they're gone!

Italian Bread Using a Bread Machine

Delicious! I used 1 tsp salt and 2 c bread flour, 1 c all purpose flour and 1 c white whole wheat flour. Yummy!!

Pepperoni Rolls

We live in the Eastern Panhandle of WV and I usually pick up pepperoni rolls from the Mennonite bakery near me if I don't have any homemade. After tasting theirs, I started putting shredded Italian cheese blend, as well as a Tbsp. of spaghetti sauce inside before sealing. Yummy! I also use the sweet dinner roll recipe on All Recipes and make it in the breadmaker. Much easier!

Iced Mochas

This recipe is great! I used a natural low calorie sweetener instead of sugar, and just sweetened to taste. Awesome, and I don't have to trudge to Starbucks and fork over $5!

Mandarin Chicken Pasta Salad

All I can say is "WOW!" I made this yesterday for a Labor Day picnic. It was devoured, so I had to make another trip to the grocery store to get more ingredients for another today! Yum! I made the homemade onion soup mix and used about 1/3 c of the dry mix in the dressing mix.

Fresh Strawberry Pie I

I couldn't find my similar version of this recipe until after I had made this one. The rubbery texture may be due to the amount of cornstarch/gelatin, as the recipe I always use calls for 1 Tbsp. cornstarch and 3 Tbsp. strawberry gelatin, not the entire box. It also states to cook over med. heat until clear, 2-3 min. I always get a scrumptious pie that doesn't last more than a day or so this way.

Creamed Cucumber Slices

Yummy! We always grow the english cukes in our garden. We use one large cuke and half a large or a whole small vidalia onion and dig in! Celery seed can be added to add a little spice.
