Great Grilled Smoky Vegetables with Avocado and Goat Cheese Crumbles

This was so, so good! I grilled the vegies for about 10 minutes because I wanted them a bit more done. I only put a little bit of the remaining marinade on after they were grilled because I didn't want to mask the great natural taste of the vegies. The onion and red pepper were slightly charred... just enough to bring out their natural sweetness. The goat cheese was a perfect blend with the vegies. I didn't have any avocado, but I will definitely add that next time. I think that this, with some nice grilled garlic bread, would be a filling meal. Thanks for posting it.

Dark Chocolate Brownies

I thought these were great. I didn't see the need to cut the butter into pieces; everything melted together fine. Instead of transferring this mixture to a mixing bowl, I added the other ingredients to the pot. I used semi-sweet chocolate as that is what I had on hand, but I definitely plan to make them again using the dark chocolate. This is now my new go-to recipe for brownies. Thanks for sharing.

Italian Cream Cheese and Ricotta Cheesecake

I thought this was just okay. I made it as written except I added a crust. The flavor was kind of bland and the texture was odd. Although I did a water bath and left it in the oven for 3 hours, it still cracked. I put a whipped chocolate ganache on top which gave it a bit more flavor. I won't make this again.

No Bake Cookies III

My mom made these years ago, and now I have made them for years. The whole family loves them. In terms of the ingredients, the only change is to increase the peanut butter to 1 full cup. I start timing them just as they reach a full boil and they always set up just right, no refrigeration necessary. Not that they really need to set in my family. After they get plopped out on wax paper or foil, we scoop up the warm, gooey yummy stuff into bowls and eat with a spoon. Delicious stuff! Be sure to have plenty of cold milk on hand. :)

Black Bean Vegetable Soup

My whole family loved this soup. The only changes I made was to decrease the vegetable broth to 2½ cups, and add fresh chopped cilantro at the end. Delicious!

Chocolate Zucchini Bread I

I thought this was just okay. It didn't rise enough; if I made it again I would add 1 tsp. baking powder. The chocolate flavor wasn't very strong, and it stuck to the pan. Sorry, but I'll try a different recipe next time.

Hearty Stir-Fry Salad

This was very tasty. My whole family enjoyed it and asked me to make it again. I made a few changes based on our preferences. I used all chicken, and substituted sugar snap peas for the broccoli. Instead of naval oranges I used a can of mandarin oranges. I did use mixed salad greens, but the next time I make it I am going to use all spinach. This recipe is very versatile and is a great starting place if you like to 'make it your own', but is also great just as written.

Chocolate Truffle Cookies

Love, love, love these cookies! They really do sort of melt in your mouth. I followed the recipe as written and baked them 9 and 1/2 minutes. After they cooled a bit I rolled them in powdered sugar. Delicious with a glass of cold milk. I will add that I think the amount of time I baked them might be considered slightly underdone by some people. They still look pretty soft when I take them out of the oven, but do firm up a bit. I always underbake my cookies by 30 to 60 seconds and I think that is what contributes to their softness, and with this particular cookie, to its 'melt in your mouth' quality. Highly recommended!

Cheesy Ham and Hash Brown Casserole

I thought this casserole was okay, but nothing special. The taste was quite bland as was the texture. I served it for Christmas brunch and no one took seconds. When I consider the high fat content and the number of calories, I don't plan to make it again. I will stick with the Spicy Sausage Quiche from this site.

Dilly Biscuit Squares

I love dill so when I came across this recipe I just had to try them. They were totally delicious! I preheated a baking stone and then baked them for 10 minutes. They were very flaky and tasty. The only change I made was to use a few shakes of garlic powder as I was out of garlic salt. I found that I didn't need all of the 4 T. of butter, so next time I will probably melt just 3 T. And there will be a next time....and a next time....

Luscious Lemon Cheesecake

The texture was very nice, and the baking time was accurate. My only complaint was that my guests couldn't tell that it was a lemon cheesecake. There just wasn't enough lemon taste so I was quite disappointed. I plan to try it again, but I will use some lemon extract next time.

Cream Cheese Pie

This was quick and easy and very tasty. I did make a few changes. I made the graham cracker crust. After I poured the filling into the crust, I heated 1/4 all-fruit raspberry spread in the microwave for 30 seconds. I drizzled this over the filling and it sank down into the pie. I cooked as directed and then added the sour cream topping. The raspberry flavor in the cheesepie was delicious. It was a big hit at the party I was at. Thanks for the recipe!

Brooke's Best Bombshell Brownies

One word: Delicious! I have made many, many pans of brownies and these have to be the best. The only change I made was to add 1/2 brown sugar and 1/2 white sugar at the suggestion of other reviewers. The top was crispy and the inside was dense and fudgy. This is my new favorite brownie recipe.

Chicken Garlic Pizza

I just made this for a group of Red Sox fans as we watched a play off game. It was a hit! I did make a few minor changes: 1) I made my own crust. I prebaked it for 6 minutes at 425 degrees as I like a crisp crust. 2) I added 1 T. olive oil to the butter/garlic mixture. Instead of chilling it, I poured it right on to the crust and spread it out while still warm. 3) I sprinkled a handful of mozarella cheese over the other toppings. Yum! What a great recipe. Thanks for sharing.
