My favorite family cooking traditions
My mom often had housekeepers do the cooking when we were growing up (we're not loaded - it's a common practice among Latin Americans). But she did make great beans and rice with meat on the side and fried plantains. Yum!
My cooking triumphs
I'm not sure I'd call it a triumph, but the other night I made coconut chicken curry light by altering the existing recipe. Instead of using a full can of coconut milk, I used half a can of light milk and for added creaminess I used fat free plain yoghurt put through a strainer and, get this, sugar-free Torani coconut syrup (the kind you make Italian Soda with). It was sooooooo good and sooooo not bad for you! :)
My cooking tragedies
I tried to make spaghetti sauce by putting all kinds of veggies and spices in the food processor (which is what my mother-in-law does). Only mine ended up tasting like I but half the roughage in the backyard in there. Disgusting! And what a waste of all those fresh herbs and veggies!

Chocolate Peanut Butter Squares
I've made this a few times and love it! It's amazing. I followed others' advice and used more graham cracker crumbs (1 3/4 cup), and actually replaced a bit with plain breadcrumbs, just to cut back a bit on the sweetness. I used natural peanut butter, b/c that's what I had, and it didn't make any difference (except that I needed to add salt to offset the sweetness of all that powdered sugar!). I ran out of chocolate, so I wasn't able to follow the advice to double the amount, but I definitely will next time! Best no-bake treat ever!

Mom's Baking Powder Biscuits
This recipe was quick and easy. I followed someone's suggestion to drop it by the spoonful on the cookie sheet instead of rolling it. It was a really wet dough, so I would've had trouble rolling it anyway w/o working the dough too much. I used margarine instead of shortening, and brushed melted margarine on top before baking. They were a hit, and next time I'll vary it up a bit with spices, cheeses, or maybe bacon bits. This makes a great template to play around with. Thanks!

Whole Wheat Pasta
Great recipe. Added a bit of water per others' recommendation. Turned out great both in fettuccini and lasagna. Thx!
