I am a daughter of Colombian immigrants to the US. My closest friends are from all over the world, and my husband is Canadian (we're blissful newlyweds). I love to travel, learn languages, and experiment with international cuisine.

My favorite family cooking traditions
My mom often had housekeepers do the cooking when we were growing up (we're not loaded - it's a common practice among Latin Americans). But she did make great beans and rice with meat on the side and fried plantains. Yum!
My cooking triumphs
I'm not sure I'd call it a triumph, but the other night I made coconut chicken curry light by altering the existing recipe. Instead of using a full can of coconut milk, I used half a can of light milk and for added creaminess I used fat free plain yoghurt put through a strainer and, get this, sugar-free Torani coconut syrup (the kind you make Italian Soda with). It was sooooooo good and sooooo not bad for you! :)
My cooking tragedies
I tried to make spaghetti sauce by putting all kinds of veggies and spices in the food processor (which is what my mother-in-law does). Only mine ended up tasting like I but half the roughage in the backyard in there. Disgusting! And what a waste of all those fresh herbs and veggies!

Kofta Kebabs
I made this as is and my four year-old daughter declared, "This is my favourite meal ever!" I served it with Lebanese garlic sauce, tzatziki, tahini, and homemade flatbread. So good! Thanks for a great recipe!

Orange Peel Beef
I really enjoyed this recipe. I doubled the sauce, b/c I had a bit more meat than the recipe called for. Plus, I decided to add some veggies (a head of broccoli, a red bell pepper, and a small red onion). I didn't have any frozen juice concentrate, so I juiced two lemons and three mandarin oranges, mixed them with 2 tbsp. sugar, and cooked it down till it reduced by half. I also didn't have any rice vinegar, so I used white. The meat was tender and the sauce was tangy. I only wish the meat was crisper on the outside, but the cornstarch it was marinated in started making the meat a bit liquidy, even before I added the orange sauce. It was great overall, and I look forward to leftovers tomorrow! :)

Amazing Pork Chops in Cream Sauce
I loved this recipe. I more than doubled the sauce and used it a couple days later over chicken. Yum! I used 1% milk instead of heavy cream, and added a bit of flour to thicken. Delicious!
