Tuna and Black Bean Salad Wraps

Made this tonight and turned out great! Didn't have a Serrano pepper, so I used some cayenne pepper to add the needed kick. I also used much less oil than what was called for...just two tbsp. to try and cut back on the fat. I used the juice of one lime. Very fresh and light; quick to make too!

Hot Artichoke and Spinach Dip II

Awesome dip! Everyone loved it! I grated my own fresh Romano and Parmesan cheese and it really made for a tasty dip. I also finely chopped the artichoke hearts and increased the spinach to 1 cup because it seemed like there was way too much artichoke bits and not enough spinach. This worked out perfectly! Other than those slight adjustments, I made the recipe as shown. You can definitely make this dip ahead of time and heat it up when ready. I decided to separate the mixture into two smaller oven-safe glass dishes so that I could serve it on two different occasions. I stored one in the fridge, covered in plastic wrap and without the mozzarella, so it wouldn’t dry out overnight. The next day, I put on the mozzarella and heated it up for my guests and it was just as good as the one I served the first night! Very easy and super tasty!!

Arrabbiata Sauce

I made this sauce on New Year's eve and reheated it on New Year's Day to serve to our relatives. I tripled the recipe because we like a lot of sauce on our penne pasta. It was just enough to serve 10. I did not have the Italian Seasonings so I used an olive oil infused with garlic and basil to saute the onions and garlic. Overall, a hit...but too spicy for my father-in-law. But he thinks that ketchup is spicy! A great quick homemade sauce.

Chinese Cabbage Salad I

An excellent, quick and easy salad that is a sure crowd pleaser! I made this over Memorial Day weekend and took it to my parent's BBQ. A few slight changes: I made the dressing the night before. I added 1 TBSP of sesame oil to the dressing and used 3/4 cup sugar. Making the dressing overnight allowed the flavors to mingle. I recommend taking the dressing out of the fridge 15 minutes prior to putting on the salad. I also toasted the cashews and noodles the night before. I assembled everything right before serving. Excellent sweet-n-salty combination!

Italian Sausage Soup

I made this hearty soup over the weekend and the prep time was so quick and easy! To cut prep time, I bought pre-sliced carrot chips and pre-cut and washed spinach. I also added a can of water and one beef boullion cube in addition to the two cans of low-sodium beef broth because I felt that it was so loaded with veggies/meat that it needed more liquid. I used a hot sausage mix from the butcher and it really gave the soup great flavor. In all, this took me 30 minutes total...painless even for a weeknight dinner! And full of flavor. 5 stars!

Buffalo Chicken Dip

I made this recipe for the Bears/Saints playoff game. Since the Bears won, I attribute this awesome dip to their success and will be making again this weekend for the Superbowl! The dip did have a strange orange color as noted from another reviewer, but that did not prevent everyone from gobbling this up! Rather than using canned chicken, I bought a ready-to-go rotisserie chicken from the grocery store and shredded the chicken breasts to use in the dish. I chose the lightly seasoned rotisserie chicken, which enhanced the flavor of the dip. I saved the other pieces for dinner later in the week. I served the dip with clubhouse sticks crackers as well as bite-sized celery sticks. Some of my guests were dipping pretzels in too. Overall, a fantastic taste that is so close to the real wing taste without the mess!

Sun-Dried Tomato Dip

This dip was the hit of our party this weekend! I will agree that it is definitely a garlic-lover's dip and might cut back to one clove of garlic next time. I made this up the night before and put it in the fridge to let the flavors mingle. It was teriffic!

Garden Tomato Salsa

A quick and easy salsa...I used a hand mixer to chop up all the ingredients. Beware of the jalapenos, especially if you buy fresh ones like we did. The seeds are the hottest part of the pepper, so if you want more kick, leave in a few seeds. But beware! Avoid touching your eyes and face after touching the pepper. My husband wiped his brow hours later (even after washing his hands) and his face burned up!

Jen's Fresh and Spicy Salsa

Quick and easy recipe to make! I used a hand blender to chop up the ingredients, which cut down on the prep time. I refrigerated this over night to let the flavors mingle and it was excellent! Next time I might slice up some fresh avocado to add in.

Italian Green Bean Chicken

This was a quick and delicious dinner. From prep time to table was only about 35 minutes! Next time I'd probably snap the green beans the night before so I could have everything ready to go when I get home from work. Great recipe!

Easy Chicken Enchiladas

Very quick and simple! The only downfall was that I had a ton of extra filling left over. I even used 8 tortillas, but still had remaining filling. Next time I'd cut the recipe in half. Definitely made well over the 6 that was indicated in the recipe.

Santa Fe Rice Salad

I made this last night as a side for my chicken enchiladas. Absolutely fabulous and quick to make! Next time I might add a can of corn to the salad. It would also be great on its own with grilled chicken breast on top.

Slow Cooker Taco Soup

Taco soup is tasty and delicious! Makes a great weeknight meal for any working adult. My husband and I topped ours with crushed tortilla chips, shredded cheddar cheese and a dollop of sour cream. Great!

Sour Cream Chicken and Potatoes

My husband and I were looking for a quick, tasty meal. Although not quick, this dish was very good! The recipe suggests 15 minutes prep time, but it took us more like 30 minutes. Instead of chicken tenderloins, we used two large boneless chicken breasts, cut into strips. The pesto mix was incredible, and it would probably be great on its own, tossed with some pasta. Overall, tasty, but prep time long. Would be best cooked for a weekend meal when you have more time.
