Hot Artichoke and Spinach Dip II
Awesome dip! Everyone loved it! I grated my own fresh Romano and Parmesan cheese and it really made for a tasty dip. I also finely chopped the artichoke hearts and increased the spinach to 1 cup because it seemed like there was way too much artichoke bits and not enough spinach. This worked out perfectly! Other than those slight adjustments, I made the recipe as shown. You can definitely make this dip ahead of time and heat it up when ready. I decided to separate the mixture into two smaller oven-safe glass dishes so that I could serve it on two different occasions. I stored one in the fridge, covered in plastic wrap and without the mozzarella, so it wouldn’t dry out overnight. The next day, I put on the mozzarella and heated it up for my guests and it was just as good as the one I served the first night! Very easy and super tasty!!

Arrabbiata Sauce
I made this sauce on New Year's eve and reheated it on New Year's Day to serve to our relatives. I tripled the recipe because we like a lot of sauce on our penne pasta. It was just enough to serve 10. I did not have the Italian Seasonings so I used an olive oil infused with garlic and basil to saute the onions and garlic. Overall, a hit...but too spicy for my father-in-law. But he thinks that ketchup is spicy! A great quick homemade sauce.

Chinese Cabbage Salad I
An excellent, quick and easy salad that is a sure crowd pleaser! I made this over Memorial Day weekend and took it to my parent's BBQ. A few slight changes: I made the dressing the night before. I added 1 TBSP of sesame oil to the dressing and used 3/4 cup sugar. Making the dressing overnight allowed the flavors to mingle. I recommend taking the dressing out of the fridge 15 minutes prior to putting on the salad. I also toasted the cashews and noodles the night before. I assembled everything right before serving. Excellent sweet-n-salty combination!
