Spiced Yogurt Pound Cake

Reviewed: Mar. 27, 2006
Made by the recipe except added a touch more cinnamon and nutmeg. I baked in two 9-inch square pans and it still turned out great - a bit thin so next time I'll use 8-inch pans. Definitely no icing needed!

Yogurt Whole Wheat Quick Bread

Reviewed: Apr. 2, 2006
This was pretty good. The texture was wonderful, but it was just rather bland, and I had added extra spices. It was way better after cooling.

Dee's Roast Pork for Tacos

Reviewed: Apr. 2, 2006
This perfumed the entire house and my family kept saying how wonderful it smelled. It wasn't as highly flavored as I expected - I cooked it in foil in the slow cooker. Next time I think I'll try it OUT of the foil in the cooker. It tasted lovely, but a bit bland. I'm going to roll it in corn tortillas and bake with enchilada sauce.

Ten Minute Enchilada Sauce

Reviewed: May 15, 2006
Super easy and super good, even with the lousy chili powder I had on hand! Family tasted the sauce and said "Wow!" before I even got it on the enchiladas.

Chicken Cordon Bleu I

Reviewed: May 15, 2006
Very easy, very good. Family was impressed even though they looked funny. Will try other cheeses or mayo in the future. I think it might be good with ranch dressing - family doesn't care for honey mustard.

Grandmother's Buttermilk Cornbread

Reviewed: May 17, 2006
My first decent pan of cornbread! Used 2 eggs and 1/2 c sugar - rather dense and still sweet, but a little on the bland side. Will probably use 1 egg and some herbs next time for a "dinner" cornbread, but leave as-is for breakfast.

Cassie's Zucchini Brownies

Reviewed: May 25, 2006
They were okay, I guess, but definitely cake-like and a bit bland. It's an okay way to use up zucchini once you get tired of "regular" zucchini bread but I doubt I'll make these again.

Cheesy Zucchini Casserole I

Reviewed: May 25, 2006
I made this to go with spaghetti using last season's zucchini I had frozen. I used a LOT less cheese, though. It was a bit on the dry side that way, but absolutely delicious when eaten with spaghetti sauce and I will try it again without sauce when I have fresh zucchini.

Arroz Con Pollo Burritos

Reviewed: May 25, 2006
It did come out nicely as far as texture but was a little bland and dry - I was hoping for a little more "sauce" to it. The recipe says to put in the tomato sauce twice and so I put it in before cooking - next time will try afterwards. It's an excellent base recipe to build on.

Zucchini Patties

Reviewed: May 28, 2006
Made as directed for the first time and they were pretty good. A little bland, though. Definitely go with THINNER patties. I am going to make the following changes next time (but they have been requested again!) 1. Half seasoned bread crumbs and half flour. 2. More spices. 3. Cook in electric skillet for evenness. 4. Different cheese - cheddar/mozz mix.

It was okay - husband said he'd eat it again, but not a rave review.

Lemon Zucchini Bread

Reviewed: Jun. 11, 2006
This was delicious and moist! I used bottled lemon juice and it STILL came out well! I used lemon juice and powdered sugar to make a glaze for it. Best zucchini bread I've had yet!

Egg Salad Sandwiches

Reviewed: Jun. 14, 2006
Family did not care for this at all - said it had an odd aftertaste. I found it bland, personally. I'll keep looking.

Beef Tips

Reviewed: Sep. 6, 2006
I'm giving this 3 stars because I did not follow the recipe and I don't think it would have been good if I had. As it was, I was very happy with the meat. I used 1/8 cup of regular soy sauce, and a little bit under 1/4 cup of Worcestershire. I did not add any salt. I used Wondra flour dissolved in cold water to thicken the liquid. I cooked it for almost 3 hrs in a dutch oven on the stovetop and it turned out lovely.

Stephanie's Freezer Spaghetti Sauce

Reviewed: Sep. 6, 2006
Holding back 1 star because I haven't tried adding the paste yet and it is very thin. However, it smells and tastes quite good. I used about half the sugar recommended.

Roasted Potatoes with Tomatoes, Basil, and Garlic

Reviewed: Sep. 10, 2006
I was dubious but it turned out delicious and everyone loved it. I was out of garlic, but I'm sure it would have been better. I mostly used grape tomatoes sliced in half and diced red potatoes. It's going in the rotation now!

Chocolate Peanut Butter Cups

Delicious and habit-forming. I melt my chips in the microwave with a little bit of shortening to make it easier to work with. I like semisweet chips, too.

Baked Scalloped Potatoes

Reviewed: Sep. 16, 2006
This was very tasty, but not what I was expecting. It all got eaten up, but I was not able to get a nice brown "crust" on top without the rest of it drying out. Will make again and keep working with it.

Simple But Awesome Lemon Pepper Pork Chops

Tender but very bland, even with marinating. I'm still looking for a good pork steak/chop recipe. Will not make again.
