Refried Beans Without the Refry

Good Old Meat Pie

This turned out really well - I never would have thought of making the sauce like that. I made it with leftover pork roast and homemade top/bottom crust as my family prefers that.

Sweet and Sour Pork III

Oh my GOSH this was good! I used two pork chops cubed and added mushrooms to the stir fry. I cooked the sauce first, then cooked the veggies and then the pork. Zapped the sauce and the veggies while pork was draining, served hot with brown rice. Family raved, said better than take-out, and said they don't normally LIKE sweet/sour (which I didn't know before I started cooking). It was all gone later that night - no leftovers!

Parmesan Baked Potatoes

The cut face got rather hard and "shiny" - it became kind of a shell with potato inside. I also thought these would be more flavorful. I would have seasoned the butter had I known. I dipped mine in ranch dressing. Family ate them and said they were a nice treat, though, so they get a 3 instead of a 1 or 2.

Navy Bean Soup I

Family ate this up and RAVED about it. I did not include bay leaf or bouillon as I did not have them - just water. Family ate it before I could even add tomatoes. Brought beans to boil, then let them sit for 2 hours, then cooked in crockpot for about 5 hours. Easy, smelled great, and tasted wonderful!

Cornish Splits

These were beautiful but tasted a little yeasty or bland or something. They were better when really "slathered" with butter but I prefer a lighter amount. Still looking for a really good yeast roll recipe.

Creamy Rice Pudding

I had some rice that was overcooked and mushy, so I gave this a try. It was easy and good, especially with cinnamon on top. Good way to use overcooked rice. Rice hardens when it gets cold, though.

Brown Rice Casserole

This was pretty darn good - a little bland, but that's okay. I used frozen tomatoes and added some sauce for liquid, omitted the peas, and cooked the rice first as per the instructions on the package. I went light on the cheese but wished I'd added more.

Herb Swirl Bread

I used fresh parsley, fresh basil, and a little bit of green onion. The crust and taste was excellent and my family tried the heel first and said it was good before they even got to the "good stuff." Four stars given because I proofed the yeast in the water with the sugar at about 112, as I usually do when baking bread, and added the oil at the same time I added that mixture to the dry ingredients. I just didn't quite trust the saucepan instructions. Don't cut this bread hot or it will squish. Also, my swirls came apart in the slices - maybe I didn't roll it tightly enough. Will try again, though, definitely!

Bread Bowls

These received rave reviews and requests that I make them again SOON. I was a bit concerned once I realized how sweet the dough was (made for chili) but it really tasted good together. I halved the recipe and made 3 bowls which I thought were rather small, but husband said next time make them smaller. Dough is very soft and sticky on first mix, but worked out fine after rising. I do think I might cut down on the sugar next time I make them for savory filling, but will leave as-is and make buns out of them. The bread had a nice crust and was very soft and tasty on the inside.

Easy Cheese and Garlic Scones

These were great and very easy. I was a little bit concerned about how wet and sticky the dough was, but they turned out just fine. Added a little bit of rosemary just for kicks.

Brown Sugar Muffins

These were pretty good, but they didn't quite get the crusty top I expected - more of a thin layer. Nice texture, but just kind of "there" - kind of on the bland side. I might make again just because they call for shortening instead of butter and they're quick. Bumping this up a star because my family really liked them and wants them again.

Chicken Quesadillas

I used chicken I had baked previously and Sargento Mexican cheese, along with sauteed onions. I brushed the tops of the tortillas with butter and baked them - they were fabulous! Husband still prefers grilled, but for a quick and easy meal, these were great.
