Cranberry Nut Granola Bars

Love this recipe! It is so flexible. I have been making every week, and change up the nuts and dried fruit. One week I added coconut and macadamia nuts, another some cashews. It's a perfect, healthy snack!

This the best recipe - lots of great flavors. I use goat cheese. Once I couldn't find dried figs, and tried dates - just as yummy! I like to use fresh rosemary, and put a sprig on top.

Enchiladas Verdes

These were the best chicken enchiladas I've had in a long time. I won't be ordering them in restaurants, as these are better - I'll be making them myself! The sauce was so yummy, and so simple to make. Gema is right, light on the cream and cheese brings the flavors of the sauce out. And I love using the deli roasted chicken, makes it very easy!

Seven Minute Frosting II

This was the perfect frosting for my cake. I love the light, stickiness . . . it did take much longer than seven minutes for me. As another reviewer, it probably took at least 30 minutes over the boiling double boiler with the mixer. If it isn't thick enough, keep cooking. I took it off and thought I could beat it thicker, and then put it back over the boiling water until it was thick, then just beat it until it was cool enough to ice the cake. This icing is exactly what my mom used to make, lots of great memories eating the cake!

Fresh Sangrita

Terrific! Next time I will pull out the electric juicer for the oranges and limes, but it was well worth all of the hand squeezing! I wasn't sure about soaking the onion, but it adds just a great under flavor. I did use this as a base for the Vampiros Mexicanos recipe on the site by Gema - it was wonderfully refreshing.

Chocolate Chip Cookie Dough + Cupcake = The BEST Cupcake. Ever.

These are great but, make sure you leave them in the muffin pan to cool, if you want them 'gooey' in the middle. I tried to make two batches for a party, and tried to take the first batch out of the pans, so I could put the 2nd batch in the oven - oh what a mess I had! But, the ones left in the pan to cool were wonderful and gooey in the middle.

Linebacker Lasagna

If you are looking for a lasagna recipe that isn't too heavy, this is the one for you! A nice balance with plenty of veggies. I ate it the same day, it would be better prepared ahead and reheated, so the flavors have a chance to blend.

So good! I used the chewy caramel recipe from this site as the filling instead of running to the store and buying caramels and unwrapping them. A dollop of vanilla ice cream on top - decadent!
