Monster Sour Cream Enchiladas

This is an excellent dish Ive made for years and its always a big hit. Ive never had anyone not like them. Only thing I do different is add a little onion powder, and cumin. I also use only white corn tortillas because I found the yellow corn to turn out too rubbery!

Island Barbecue Chicken

This is actually a great recipe. I live in Hawaii also and this is very similar to huli huli chicken. Six cups is about right in order to cover 10 pounds of chicken. This is a great dish. I have made this tons of times for the family and they love it. I grill it with thin slices of ginger over the top of the chicken. Also a quick note! If you combine these ingredients in a crock pot and throw the same amount of chicken in, you will end up with wonderful tender peices of chicken to serve over rice. We call that shoyu chicken!

Greek Chicken Pasta

I really enjoyed this recipe. This is not too high on the fat content. The only thing I did different was puree the fresh tomato since my husband doesn't care for them. I also added some sliced black olives. Very very yummy. Great leftover too!

Sesame Crusted Mahi Mahi with Soy Shiso Ginger Butter Sauce

Wow! I was really impressed with this dish. I used Opah because it was fresh and used scallion and basil substitutes. OMG! The fish was good without the sauce but with it was awesome. I almost licked my plate!! Thanks so much! I will be making probably once a week at least.

Twice Baked Potatoes

Wonderful recipe. I did make a couple changes to suit my tastes. I omitted mushrooms and the white onion. I only added scallions. Since a few people said it was dry and I like creamy, I added about 2 tbsp of half and half. Was a huge hit and will use it again! Thanks for the recipe.

To Die For Blueberry Muffins

What a wonderful recipe and easy too. I made 6 large muffins without doubling the recipe and they turned out wonderful. Baked for 24 minutes at 400. Thanks!

Chicken Tequila Fettuccini

I made this because my husband loves the CPK version of this. I have to say that it is just as good! The only difference is I use half n half instead of heavy cream to cut down the fat and it was wonderful. Thanks for sharing!

Traditional Gyro Meat

This was off the hook! Im a big gyro fan and hate paying an arm and a leg for it. I added extra garlic and salt per other reviews, and subbed onion powder for onion for the kiddos. I also did not process the meat. Flavor was spot on...even my 9 and 15 year old were highly impressed. Served it with tzatziki from this site, and a greek salad. Thanks so much for sharing!

Caesar Salad Supreme

Pretty good recipe overall. I gave it a four because I thought it was too mayonnaisy. I made a few changes based on previous reviews. I dont care for anchovies too much so I reduced to one, lessened the garlic and added a little bit of red wine vinegar to cut the thickness of it. I also blended in a mini food processor and it turned out perfect. Thanks for the recipe!

Fragrant Chicken Curry

I thought this recipe was pretty good. I omitted the tomatoes. I had to add salt for taste and flour to thicken the sauce. I also decided to add some cardamom & turmeric. My son had thirds as well. I will be making this again, but maybe trying yogurt instead of coconut milk.

Tzatziki Sauce

This was very very good with a couple changes per other reviewers. I used the already strained greek yogurt and also strained minced cucumber on a few coffee filters. After an hour, I folded up the filter and squeezed the juice out of the cucumbers. I cut the dill in half and put 2 cloves of garlic. This was very good and thick. Not only was it great on my gyros from this site, but very good with raw veggies.

Fluffy Pancakes

Very good recipe! I did have to add more milk because it was so thick it didnt make circles on the pan. I had to triple the recipe to feed me and three hungry kids. They were fluffy and delightful. I followed the recipe exact except for having to add a little bit more milk. Thanks for sharing.
