Great recipe. I didn't feel like it needed the broth either. The sauteed onions and cabbage are a perfect match for the sausage and pierogies. Mmm!

Easy Fish Tacos with Mango-Pineapple Slaw

The slaw was great. I used tilapia filets instead of cod. I dredged them in a mixture of flour & Old Bay seasoning, then pan fried them. I prefer corn tortillas to flour ones.

Ham and Cheese Bowties

Sauce easily accommodates a full 16 oz of pasta. I used a mix of cheeses (a taco blend). I topped with a handful of crouton crumbs. Other than that, this recipe is a keeper.

Playgroup Granola Bars

As other reviewers noted, this recipe can easily be changed to suit your personal tastes. However it is great as is. One suggestion: after greasing my pan, I line it with foil and grease that. When bars are baked, I remove them by lifting the foil out. They are much easier to cut that way. I pack two in a snack-size bag and freeze them in a resealable freezer bag. So easy to grab for my husband's lunch or a quick breakfast. mmm!

Bar-B-Q Baked Beans

This is now my standard and oft-requested bake bean recipe. I tend to play with it a bit. I rarely keep chili sauce in the house so I use ketchup and a spoonful of relish instead. I usually add some BBQ sauce if I have some, as well as some minced onion. The bacon is what makes it really great. I usually cook some ahead of time which I crumble and toss in. Oh and I always make this in the crockpot!

Eggplant Parmesan II

Great recipe. A tip for breading eggplant: Use a large bowl to coat the slices with the egg mixture. Then put several at a time in a large plastic ziploc or food storage bag to which the breadcrumbs have been added. Close the bag with your hand at the top and toss the slices around until coated. Remove indv. slices with a fork! I haven't touched food I'm breading in years using this method!
