OMG! I made this last night for my father in law's birthday dinner, it was the best chicken that any of us ever had! My 4 yr old son & 6 yr old daughter could'nt get enough!! Wow, this is the oly way I will make roasted chicken again. I had an 8 lb chicken, doubled the seasonings (except the cayenne & salt), put the seasonings in a shaker and rubbed it under the skin as well as over it. I quartered an onion put it in the cavity-meant to add garlic but forgot-Then I wrapped in saran wrap, put in fridge for 4 hrs and then cooked it for 5 at 250. YUMMY!!!!!!!! Today I made soup with the dark meat and bones and the broth is a little on the spicy side.
