Passover Sweet Kugel

We had Seder at our house tonight where I served this kugel. I didn't change one item in the recipe. There were 15 of us in all with the majority of the guests being NOT Jewish but the kugel was a HUGE hit with EVERYONE! :-) Definitely going to make this again.

Marie's Easy Slow Cooker Pot Roast

This was GREAT! I followed the directions exactly and it turned out delicious. The only thing I might change for the next time is to buy pearl onions and baby potatoes, instead of having to chop the larger varieties.

Cinnamon Noodle Kugel

We were invited to a dear friend's house for Christmas dinner this year. I made and brought this kugel as a side dish. It was a HUGE hit! So delicious. I did change some things though. I used a 16 oz bag of wide noodles. Used the lower fat versions of milk, cottage cheese, sour cream and cream cheese. Plus instead of sugar, I used Splenda. No one could tell the difference. I'll definitely be making this again.

Chicken Vegetable Barley Soup

I made and served this today. However, I substituted the chicken with turkey breast and the quick cook barley (because I couldn't find any) with Kasmati rice. Plus I added a bit more garlic and used the lower salt variety of chicken broth. It was DELICIOUS and filling!! And since I made enough for at least 3 more meals, my hubby and I will be able to enjoy the soup again within the week.

Healthier Broiled Tilapia Parmesan

I made this for the first time tonight, for dinner. I used Swai instead of the tilapia (only because it was a little less expensive). My husband, who is not a fan of parmesan (or similar cheeses) LOVED this dish. Thanks for a great recipe. I'll definitely be making this again.

Cranberry and Cilantro Quinoa Salad

This is SO good! It's even better the next day. The only thing I changed was to add the curry to the water before boiling. It really infused the flavor of the curry. I'm sure I'll be making this again.

Quinoa and Black Beans

This was GREAT!! Very tasty and healthy. And so easy to make. The first time I made it was for a New Years Eve get together my husband and I were hosting at our house. It served as one of the main dishes. The second time I made it and took it to a friend's house for dinner. This time I served it as an appetizer, with Tostito's Multi Grain scoops. It was a HUGE success both times. I'll definitely be making this again.

Chocolate Cherry Upside Down Cake

This was really good. I only had 1 cup of white flour left so I used that plus 1.25 cups of whole wheat flour. And instead of making it in a 9 x 13 pan, I used two round 9" pans. In between the layers I put Cool Whip Lite. And served with more of the cool whip. The result was that it looked really pretty and it tasted very similar to a Tastykake chocolate creamie.

Yummy Jewish Apple Cake

I made this for a Holiday Luncheon. It was a HUGE success. However, I did tweak it a bit. Instead of using 3 cups all purpose flour, I used 1.5 cups of all purpose flour and 1.5 cup of whole wheat flour. I also used 1 cup sugar and 1 cup of Splenda. I combined the cinnamon with 5 tbsp (yes Tablespoons) of Splenda Brown sugar blend and mixed it thru the sliced apples (I used 5 apples), setting them aside while I mixed the rest of the ingredients.

Easy Meatloaf

This was outstanding!!! And as the title indicates, very easy to make. My husband, who is not a fan of mustard, even liked this. Generally when he likes something a lot, he will say it's "not bad", but he actually said this was "really good!" Very high praise. :-) The sauce gives the meatloaf a nice sweet/tangy flavor. I only used half an onion and used italian flavored breadcrumbs. I'll definitely be making this meatloaf again.

Edamame-Stuffed Wontons

I made these for New Years Eve (adding twice the amount of garlic). Prepared the edamame mixture the day before and let it sit in the refrigerator so the flavors could "mingle". They were GREAT! A huge success with everyone. Even my husband who isn't a fan of edamame. Served the wontons with Chinese mustard, Hoisin and Ken's Asian Sesame dressing as dipping sauces. I'll definitely make these again.

Lemony Quinoa

I doubled the recipe so that I could take some to a BBQ and have some for home as well. I substituted the pine nuts with chopped almonds and added 5 thinly sliced baby carrots and half a yellow pepper. At first, after I made it, I felt like it was missing "something". I had my son taste test it and he agreed there was "something" missing. So I added a little more cumin and cayenne pepper (maybe about another 1/4 teaspoon of each) Plus I added about 1/2 teaspoon of dried oregano. After I mixed everything in, I let it sit in the fridge for a couple of hours before serving. It was DELICIOUS (and very colorful). A huge hit at the BBQ.

Quinoa Side Dish

I made this for the first time tonight for my husband and our two dinner guests. It was a HUGE hit. So tasty and easy to make. I made a double batch and have just enough left over for me to have for breakfast in the morning. I'll definitely be making this side dish again.

Seafood Quiche

I was just reading one reviewers comments about the consistency of this dish being thin. I haven't made it, but just looking at the ingredients, I notice that there is no CHEESE mentioned. I believe if there was cheese in this dish, it would have a richer consistency and flavor. That's just my opinion, of course.

Pecan Dijon Chicken

I made this tonight for dinner. I was bit concerned because my husband is not generally a fan of mustard, but the mix of the orange juice, honey and mustard was perfect. It was a big success and so easy to prepare that I'm sure I'll be making it again.

Chicken a la Good

This was a huge success in my house. I don't particularly enjoy cooking so I try to find easy recipes that sound tasty to me. Originally my husband and son thought I bought it already prepared and nearly fell off their chairs when I told them I made it from scratch. This was really delicious. I'll definitely keep this one in my recipe file to make again.

Sugar Coated Pecans

These were great! The only ingredient I changed was the sugar, using Splenda instead. I brought them to our friend's house for Thanksgiving dinner. Some people ate them alone, others used them as a topping for ice cream. The pecans were a huge success and so easy to make, that I'll definitely make them again.
