Day Before Mashed Potatoes
I've made these many times and they're ALWAYS a crowd pleaser. Since my time is usually short (two toddlers 18 months apart), I don't even peel the potatoes. Also, I don't bake these. I just serve them right after I mush everything together (in the crock pot). That way they are still moist (and saves time). They taste great reheated with cheese and bacon on top. Oh, By the way...if any of you are new to cooking, DON"T try to "mash" these in a food processor!!! They end up being a gluey mess. I learned this the hard way as I was trying to cook an impressive meal for my in-laws when I was first married. They certainly made an impression! Just not the one I was going for! :)

Gyros Burgers
This tastes GREAT (especially with tzatziki sauce). Instead of making patties, we just cooked it in a pan like ground beef. But BEWARE!!!!!!!!! This will stink up the house something aweful. Best if cooked outside. :)

Bacon Cheddar Deviled Eggs
GREAT recipe! I made these for myself right after I delivered my son. It was perfect food to have in the fridge for post-delivery nurishment. When I was completely out of it, tired, or too busy to cook, it was really nice to be able to reach in and grab some protein. I now make these for all my friends when they have babies! One thing I do to make assembly a little easier...I cut up the bacon before I fry it. It makes it easier to cook and crumble afterwards.
