Turkey and Quinoa Meatloaf

This was fantastic!!! I only had 16oz of ground turkey so I added 4oz of spinach (cooked it with the onions). I used Jalepeno hot sauce so that it would be fairly mild. I followed what someone said below and used two eggs instead of one. Delicious!! Only downfall? There wasn't more of it!

White Chocolate Raspberry Cheesecake

FANTASTIC! I agree...use more cookies at the bottom than in the recipe. I personally used chocolate graham crackers. I also used low-fat cream cheese and fresh raspberries that were picked locally, it was delicious!!! Family ate it up in seconds! I will be making this over and over again.

Fig and Olive Tapenade

This was a very last minute dish that I decided to bring for last night's NYE party. I doubled the recipe and used goat cheese, fresh rosemary, fresh thyme and the mix of black and green olives. I only had 2 hours to make it and let it sit in the fridge but really, that didn't stop it from it being the #1 hit at the party!! We actually had to sneak the tiny leftover back home to eat it later today. I will certainly make this again!

Rhubarb and Strawberry Pie

This was amazing! I went strawberry picking yesturday and made the pie today along with local fresh rhubarb. i changed the recipe by using 3 cups each of strawberries and rhubarb. i didn't use the flour but instead (as previously mentioned) mixed 1/4 cup of water with 2 tablespoons of cornstarch and let it sit with the berries, rhubarb and sugar for 30 minutes. i also baked the pie for 15 minutes at 425 and then 40 minutes at 375. we let the pie cool for about 3-4 hours and it's not runny at all!! this was so good that i'm making 2 more of these pies to give to my family and neighbor! also just a note - you don't need to cook the rhubarb before hand - you need to make sure it's chopped up (about 1/4 inch) and also if you notice the skin is a little tough, peel it a little bit. thanks so much for a recipe that i'll definitely use again and again!!

Broccoli With Lemon Almond Butter

I really enjoyed this but my boyfriend thought there was too much lemon. I will cut down on half for the butter and lemon next time and I will also toast the almonds.

Pasta Shells with Portobello Mushrooms and Asparagus in Boursin Sauce

I made this using a garlic & herb boursin. I also added some spinach and black pepper. I replaced the chicken broth for vegetable broth. I noticed that the sauce was not thick and very watery from the broth. I was able to make it a perfect consistency by adding 1 tablespoon of corn starch (pre-mixed in a little bit of cold water so it wouldn't clump up). This was amazing and my boyfriend finished his entire plate... I didn't... it's a heavy dish!! We loved it though! Great recipe!

Spinach Mushroom Quiche

I've made this twice so far and love it! I haven't been able to find Lemon Herb soup so I use half a packet of Zesty Herb marinate. I found a Lemon Herb seasoning that I will try next time. Make sure you don't use a whole pack of seasoning, it's TOO intense. Also, in order to make sure it cooks through, dry those veggies off as best as possible! I like to throw in spinach, broccoli and mushroons. It's delicious!

Sweet and Sour Pork III

i am a vegetarian. i substituted the pork for fake steak strips from Morning Star Farms. this came out amazing!! what a great, tasteful and hearty meal for a vegetarian!! i've learned my lesson on corn starch... never a good idea to just throw it in hot liquid. make sure you dissolve it with cold water before ou add it!! haha.

Apple Pie by Grandma Ople

There was WAY too much syrup for this. It was a little too intense on the sugar for me to enjoy. It was also very hard to keep the pie looking beautiful while pouring the heavy syrup all over it, the thick syrup did not fall very well through the basket weave.

Butternut Squash Soup II

beautiful color, delicious taste! my boyfriend is hard to please so when he came home from a business trip and had a cold, i cooked him up a batch of this and he ate it all up! loved it and definately said it was the best way to come home!

Apple Crisp II

i've made this in two different ways. first in the pan for at home. it was delicious. i used fresh from the orchard Macintosh apples. beautiful!! the second time i made individual cupcake holders for a bake sale we were having. they completely sold out and everyone raved!! i'm making this again for a big family dinner and it is sure to be a hit. great recipe - wouldn't change a thing!!

Hearty Vegetable Lasagna

This was pretty good except I think duet to all the sauce, it didn't come out too firm. However, after a night in the fridge and a microwave at work, it's better. The taste was overall very good! I added zuchinni and broccoli to the mix (cut down on the mushrooms, pepper and onions). I also forgot the parm. cheese in teh middle so i sprinkled it on the top. All in all 4 stars, and only because it was a little soupy. I'd suggest a little less sauce.

Zucchini Herb Casserole

I took this to a "Hootenany" party and everyone ate it up! I was hoping to have leftovers for myself but NO WAY! I doubled this recipe in order to have enough. People were using it as a dip too by putting it on tortilla chips. I was THRILLED!!!

Tahini-Battered Tofu

Straight up, this wasn't great... The flavor was not there! The batter wouldn't stick to the tofu. So I mixed together everything except the flour. I soaked the tofu in the wet mixture and then coated it in the flour. Then I ended up frying it in a pan until it was lightly fried. Still came out totally tasteless (not TOTALLY but not anything much). I'm throwing these fried tofu cubes in a pad thai dish. Ooohhh ya and I also used 2 whole eggs.

Absolute Mexican Cornbread

I cut this recipe into 3 servings and then cut the sugar and butter measurements in half. This turned out AMAZING! I served it with vegetarian chili and it was incredible. Not too sweet and had a great consistency for cornbread.

Peanut Butter Cookie Bites

My boyfriend is a type 1 diabetic and he LOVES these cookies. I love them too. They have become a staple in my cookie jar for sure!!! They are really incredible, I hear it from everyone who tries them.
