Layered Chicken and Black Bean Enchilada Casserole

Reviewed: Jan. 17, 2011
I used double the sauce and 1/2 a container of plain yogurt instead of sour cream. Delicious.

Ten Minute Szechuan Chicken

I used lemon juice instead of vinegar. The food was tasty, but salty. I would use low sodium soy sauce next time.

Sweet and Tangy Sauteed Collard Greens

yum! I used what I had in the cupboard. Balsamic, olive oil, white sugar, salt, pepper. Had just a single serving of greens in the fridge and calculated out a 1/4 of the dressing. Was AMAZING. first time making greens too.

I didn't like it, but he did. Very tender and easy to slice. I threw out most of the veggies because no one would eat them.

I use this recipe ALL THE TIME. I think the white vinegar is too strong but I like the dish. It is unique and tender.

I boiled the chicken and shredded it and prepared as directed. Then, used the chicken in QUESADILLAS with Jack cheese for a fiesta party. A hit! Beautiful, light flavor.

Apple Crisp II

Reviewed: Oct. 28, 2006
I didn't have 10 apples so I wanted to half the recipe but forgot when I was adding the sugar. So... I added too much sugar but it all still turned out great! I used extra crisp topping too. It was gooey and sugary and so tastey. I am not giving it a five because it was really sweet (my fault). Oh and I used red apples.

Pam's African Chicken Stew

Reviewed: Jun. 20, 2006
Loved it. Delicious. It is inexpensive, easy and quick. A good change in the menu. I followed the recipe as stated except that I omitted the liquid in the can of garbonzo beans. I was hoping for a nice thick stew and I got it. Served it over brown rice. Reminds me of a peanut curry-type dish. The spice, sweet potato and peanut butter are great! I will make this again! May also be good over rice noodles. Mmmmmm my belly is still warm.

Grandma's Ham Casserole

Reviewed: Jan. 27, 2006
The recipe makes a good side dish... It doesn't look very appetizing although it smells great. My boyfriend didn't really wanna try it but then ate half of it. Use more ham than the recipe calls for.

My man loved it. The recipe was very easy and it looked great. Leftovers were good too. We like a little more sauce with our pasta so I added a whole jar of sauce...

Peking Pork Chops

Reviewed: Jan. 13, 2006
I followed suggestions of low salt soy sauce, added a tablespoon of cornstarch, used fresh ginger. It smelled great but my husband didn't like the sauce. I don't eat pork so... His rating is a two. I don't like to see him unsatisfied with the food I make.
