Eileen's Spicy Gingerbread Men
Wow! Loved this recipe! The first gingerbread I've made that came out soft and delicious! They're usually crunchy. I accidentally put in the whole egg instead of just the yolk, and it was fine. And yes, this is a rolled cookie so you need to work in small batches, flour your work surface, your rolling pin, and your dough ball. Practice makes perfect!

All-Day Apple Butter
I have made this recipe several times, and it is to die for! But the first time I made it with the 4 cups of sugar and found it was WAY too sweet. So the next several times I made with half or less and it was wonderful! As for peeling the apples.....forget that! I use organic apples only, so I simply wash them. If you core and slice them with a pampered chef slicer, or similar, it makes things go very quickly! Then, after slow cooking for the entire day, or overnight, you can use a quality immersion blender and you'll never know you left the peels on! And, you've added some extra healthy fiber to your diet! Trust need to peel!

Creamy Chipotle Chicken
This was awesome! But very spicy with 3 chipotles! Kids couldn't eat it, but the hubby and I LOVED IT! I tried to tone it down by adding the rest of the greek yogurt I had in the fridge and sour cream. I also added another can of cream of chicken soup, but to no were a no go! But it was delicious! And I threw a whole bag of roasted corn in from trader joes! YUM!
