Creole Mexican Catfish

Few changes: sea salt instead of regular salt, butter instead of margarine, and I put the canned tomatoes beneath the catfish. Instead of 40 minutes it cooked in 30 minutes and cooked off some of the liquid from the tomatoes. It tasted great, a little heavy on the spices so next time I'll reduce so we can actually taste the fish. By the way, if you don't like fishy fish, make sure you buy fresh fish that doesn't smell. If it does, then it's old.

Indonesian Pork Satay

This was very salty, but I did use regular soy sauce since it was on hand. Next time I'll use lite and possibly reduce the the amount. I did rinse the peanuts to remove the salt and oven roasted them. The flavor was pretty good, I plan on making them again in hopes of making them less salty.

Scott Hibb's Amazing Whisky Grilled Baby Back Ribs

The men loved it. Don't cook this during the summer when it's hot out (it was over 100 today and I was sweating during the slow cooking process with the AC on). They slow cooked about 2 hours then went onto the grill and my husband comment on how they were already falling apart. The sauce makes tons so I froze it for the next time. The sauce was excellent even though I didn't have molases on hand.

Burrito Pie

I used one pound beef and one pound ground turkey and omitted the olives. Other than that I followed the recipe as stated. I thought it was good, but a regular home made burrito is better and takes less time to make. My husband specifically asked to have do-it-yourself burritos next time. Brown the meat and have all the extras on the side to put on yourself. Doubt that we'll make this again.

Chicken Cordon Bleu II

I followed the recipe and wasn't as impressed as I was expecting (based on all of the reviews). It was good, but not great. It seemed to be missing something. The recipe made so much left over sauce, however we don't put sauce on our veggies like some do. I'll try cutting back the cream next time and see if that helps as well as finding a different type of ham that has more flavor.

Baked Dijon Salmon

I used just over a pound of Alaskan salmon and it seemed that I had too much sauce as well as bread crumb mixture with the given amounts from the recipe. I kept putting it on and ended up throwing out a little of both. I was affraid it would over power the salmon flavor but it was very good. Many recipes mask the flavor of the meat but this one complimented it well. Who would have thought of putting chopped pecans on salmon? We'll be making this one again.

Aussie Chicken

If you don't want to taste chicken, this is the dish. Next time I'm going to omit the corn syrup (it's way too sweet) and decrease the honey a touch. I may also decrease the amount of bacon to one slice per piece of chicken. I didn't pound the chicken and was fine the way it was. Once I make the changes I think it will be 5 stars for us.

Slow Cooker Adobo Chicken

This should be called Soy Sauce Chicken. The chicken came out tender and juicy, falling off of the bones. However, if you don't like soy sauce don't make this. That's the only flavor we could taste. I'd make it again if I didn't have anything else in the house but I won't go out of my way to make it again.

Restaurant-Style Tequila Lime Chicken

I did several changes that were recommended from other reviewers. I left out the water from the marinade, substituted Worcestershire sauce for the liquid smoke, and used more tequila than recommended. I ended up making my own teriyaki sauce from a recipe on this site and the chicken itself tasted wonderful (not overpowering). I marinated it for half a day and I didn't pound the chicken as others recommended. It had plenty of flavor as is. My husband loved the mexi ranch dressing; I can't imagine it tasting anything like ranch with salsa as some have done before. We made a simple Mexican rice dish found on this site as well and it complemented the chicken quite well. My husband is looking forward to having it again soon. Since it wasn't very time consuming and quite tasty I'll be more than happy to make it.

Sean's Falafel and Cucumber Sauce

I've made this twice now. As written, I would give this recipe a 5. We tried baking it (other reviewers seemed to not mind it this way) the most recent time and it was tasteless and cardboard like. Didn't even need the pitas! Follow the recipe otherwise you'll find it very bland and not worth making.

Apple Stuffed Pork Chops

The stuffing for this was wonderful. I ended up using 1.5 pieces of wheat bread for a half recipe. I chopped it into small pieces (kind of like stuffing) rather than making it crumb like. I think it added a little more texture. I didn't bake it because I'm always worried about over cooking them. I used the Stuffed Pork Chops III method of cooking them...brown on each side then simmer in beef broth. It takes less time and they come out tender and juicy. My husband said this is his favorite stuffed pork chop recipe now and would like it again. Hope you enjoy it as much as we did.

Spinach Stuffed Chicken Breast

This recipe is excellent as written. They looked wonderful and tasted as good as they looked. My huband has requested that they be made again. If you don't have the time I'm sure their are short cuts as other reviews have done, but they won't be "Stuffed Chicken Breasts". Try it as directed the first time so you get the full appreciation of this dish.

Jumbo Fluffy Walnut Apple Muffins

These tasted wonderful. The only change I made was grating some of the apples and slicing the rest based on another reviews recommendation. The crumb didn't come out right for me so I'll have to try making a change on that next time. If you have lots of apples on hand and would like to make something tasty with them, this is a great recipe.

Prize Winning Baby Back Ribs

I thought the rub was quite tasty and I ended up using my homemade BBQ sauce made of ketchup, sugar free maple syrup, cider vinegar, Worcestershire sauce, beef granules, garlic, cayenne red pepper, salt, & pepper. It was perfectly cooked on the grill. Next time I plan on making Scott Hibb's Amazing Whisky Grilled Baby Back Ribs because I'd like them to be a little tenderer.

Teena's Spicy Pesto Chicken and Pasta

I've made this dish countless times but I always add chopped sun dried tomatoes (Packed in oil), artichoke hearts, and sauteed onions, zucchini, & yellow squash. Other than that, I always keep the recipe the same and is excellent and easy to make. Even my 14 month old eats it!

Gerry's Chicken Enchiladas

This takes forever to make! However, it tasted great. I should have read through the reviews because a couple of hints would have helped. Reduce the amount of chicken broth otherwise you'll be wating an hour or two for the mixture to boild down. Also, soak the tortillas in cream for several minutes otherwise you'll be breaking them when folding. My husband and I both thought they were wonderful. Next time I'll make a double batch and freeze the left overs to save some time.
