Eggs with Tomatoes

Reviewed: Oct. 18, 2006
Simple and delicious. Easy to make with ingredients on hand- I added 1/2 a can of corn and my little girls loved it!

Molasses Baked Chicken

My family loves it! Great for using up those things that seem to sit in the cabinet forever!

Hearty Italian Lentil Soup

Reviewed: Mar. 5, 2007
This was a terrific recipe for using up a lot of leftovers we had hanging around. I used some homemade meat sauce instead of the separate meatballs - and it turned out beautifully. Even our kids loved it. Beware, though - this makes a BIG pot!

Wendy's Quick Pasta and Lentils

Reviewed: Jul. 31, 2012
Yum! If 2 out of 3 kids gave it a big thumbs up, we are definitely adding it to the rotation! I love it that no one had a clue about the lentils (tiny red ones cook up unrecognizable) and the spinach (they thought it was "herbs"). The only changes I made were to use just lentils instead of the soup, and half a jar of pasta sauce + one chopped tomato, and a bigger pasta shape (it's all I had on hand). Add your own spices and you've got a big hit!

Capirotada (Mexican Bread Pudding)

Reviewed: Sep. 7, 2006
I made this just because I happened to have all the ingredients on hand. It's fantastic! Like a sweet French toast casserole, minus the eggs. Would be great as a brunch dish.

Burmese Chicken-Coconut Soup (Ohn No Kyawswe)

Reviewed: May 16, 2013
Unbelievably yum! Made it pretty much as written, except the chick was already cooked, skipped optional garnishes, and only 1/4t cayenne, which left it still quite spicy. Even at that, my 10 and 7 year olds happily devoured their portions, alternating bites with salad or bread to mitigate the heat! Definitely a keeper!

Caramelized French Toast

Reviewed: May 21, 2011
Everybody loved this, but I gave one less star for the weird step with the caramel. Per other suggestions, I added boiling water soon after the brown sugar, but still ended up with little caramel rocks! I boiled it for a while, though, and just dipped the bread in the pan, then sprinkled the toffee "crisps" over the top. We, too, used almond instead of vanilla and topped it all with whipped cream. Everyone had extra helpings!

Broccoli Risotto with Cream and Lemon

Reviewed: Nov. 9, 2008
I made this exactly by the recipe except that I had no cheese and I through in a little leftover shredded chicken. It didn't taste as good as I had expected, (delicious and creamy, but rather bland.) but I suspect the cheese would have made a big difference. Will definitely try it again!

Greek Chicken Wrap

Reviewed: Oct. 6, 2008
Loved it! DH especially appreciated the tang of the fresh pressed garlic. I used leftover chicken from a roast instead of the marinated breasts and it was just great.

Whole Rice and Lentils (Majadara)

Reviewed: Jan. 24, 2013
Turned out much better than I expected, even though I didn't have a full cup of lentils to add in. Chicken stock to replace the water adds some extra flavor. 2 of my 3 kids ate it up happily, so I count that a success!

Sweet Potato Pie I

Reviewed: Nov. 4, 2011
YUM! And ALL THREE of our small children ate her piece in 10 seconds flat! The only change I made was to split the sugar 1/2 white and 1/2 brown. Great for breakfast too!

Home-Style Brown Rice Pilaf

Reviewed: May 16, 2011
Tasty enough, especially when sprinkled with soy sauce as recommended. One child ate it happily, one with the promise of dessert, and the third refused to eat more than a bite. DH and I both enjoyed it. I made it exactly as written with the exception of excluding the mushrooms, and adding some "Turkish Spice". Next time I'll try substituting cilantro for the parsley as it still seemed too bland to me.

Fairly tasty - I did throw in some peas and tomatoes, and then a little milk to make it "saucy".

YUM! This was the first time I had ever made hummus. Pretty plain by itself, but simple to jazz up with lemon juice and extra spices!

Creole Chicken II

Reviewed: Feb. 15, 2009
Deliciously different. I made this exactly as written, except with bouillon cubes and water instead of just the bouillon. We served it over spaghetti - husband and I both enjoyed it - especially the sweet contrast with the tomato sauce. Kids gave mixed reviews -

Broccoli Chowder

Reviewed: Feb. 3, 2009
Pretty good - I omitted the nutmeg and added garlic and herb seasoning, and through in some leftover ham. Also pureed half the veggie mix, which turned the whole soup green. Two kids ate the "grouch soup" with delight, the third was not so impressed, but we will definitely have this again!

Old-Fashioned Honey Pecan Pie

Tasty version that we can make in a place where corn syrup is not available. Seemed over-sweet to DH, but our Russian friends loved it!

Spinach Skillet Bake

Reviewed: Mar. 5, 2007
Interesting combination of ingredients, and a good basic recipe, but fairly bland without "tweaking". I added more Italian herbs and seasoned salt, and still felt it lacking. Will keep using the recipe, and try different seasonings. Don't forget to drain the thawed spinach, or the result is pretty watery.

Baked Salmon II

Reviewed: May 13, 2013
Fantastic! I very rarely give a recipe a 5, but this one deserves it. Even my two older "we don't eat any fish but tuna from a can" daughters loved it and asked for more. Even better cold the next day.
