Hearty Italian Lentil Soup

This was a terrific recipe for using up a lot of leftovers we had hanging around. I used some homemade meat sauce instead of the separate meatballs - and it turned out beautifully. Even our kids loved it. Beware, though - this makes a BIG pot!

Cottage Noodles and Cabbage

It sounded like an awful combination - but it tastes fantastic! My family loved it. I used macoroni instead of spaghetti and tweaked the spices, as it seemed a little bland to me as is.

Capirotada (Mexican Bread Pudding)

I made this just because I happened to have all the ingredients on hand. It's fantastic! Like a sweet French toast casserole, minus the eggs. Would be great as a brunch dish.
