Whole Grain Waffles

Super yum! Only change I made was to increase the oil on account of no applesauce to be found! Kids loved it. Mom's happy. Big win all the way around.

Burmese Chicken-Coconut Soup (Ohn No Kyawswe)

Unbelievably yum! Made it pretty much as written, except the chick was already cooked, skipped optional garnishes, and only 1/4t cayenne, which left it still quite spicy. Even at that, my 10 and 7 year olds happily devoured their portions, alternating bites with salad or bread to mitigate the heat! Definitely a keeper!

Baked Salmon II

Fantastic! I very rarely give a recipe a 5, but this one deserves it. Even my two older "we don't eat any fish but tuna from a can" daughters loved it and asked for more. Even better cold the next day.

Whole Rice and Lentils (Majadara)

Turned out much better than I expected, even though I didn't have a full cup of lentils to add in. Chicken stock to replace the water adds some extra flavor. 2 of my 3 kids ate it up happily, so I count that a success!

Wendy's Quick Pasta and Lentils

Yum! If 2 out of 3 kids gave it a big thumbs up, we are definitely adding it to the rotation! I love it that no one had a clue about the lentils (tiny red ones cook up unrecognizable) and the spinach (they thought it was "herbs"). The only changes I made were to use just lentils instead of the soup, and half a jar of pasta sauce + one chopped tomato, and a bigger pasta shape (it's all I had on hand). Add your own spices and you've got a big hit!

Sweet Potato Pie I

YUM! And ALL THREE of our small children ate her piece in 10 seconds flat! The only change I made was to split the sugar 1/2 white and 1/2 brown. Great for breakfast too!

Caramelized French Toast

Everybody loved this, but I gave one less star for the weird step with the caramel. Per other suggestions, I added boiling water soon after the brown sugar, but still ended up with little caramel rocks! I boiled it for a while, though, and just dipped the bread in the pan, then sprinkled the toffee "crisps" over the top. We, too, used almond instead of vanilla and topped it all with whipped cream. Everyone had extra helpings!

Home-Style Brown Rice Pilaf

Tasty enough,especially when sprinkled with soy sauce as recommended. One child ate it happily, one with the promise of dessert, and the third refused to eat more than a bite. DH and I both enjoyed it. I made it exactly as written with the exception of excluding the mushrooms, and adding some "Turkish Spice". Next time I'll try substituting cilantro for the parsley as it still seemed too bland to me.

Ginger Beef Stir-Fry

Pretty good - I only had oyster sauce, so I'm sure it was a completely different flavor than if I'd used the plum sauce. All the same - all the family enjoyed it, and the baby had a second plate!

Poor Man's Cookies

We love these cookies! During the Lenten season here in Russia, all products of animal origin are excluded, so these cookies are great for serving with tea to guests whether they are fasting or not. I have made them at least 5 times in the last month, and always get a positive response.

Crazy Cake

Very, very good, especially considering all the things that AREN'T in it! I think my pan was a big smaller, so even strictly following the baking time/temp, I ended up with an almost "fudgy" layer on temp - probably not intended in the recipe, but it tasted great anyhow! Used a soft spread/peanut butter/powdered sugar frosting

Easy Bake Fish

SO SIMPLE and delicious! Stuck to the reciped except without black pepper, and it was GREAT! I scraped all the extra sauce from the pan just to eat with the rice-- can't wait to try this with other kinds of fish!

No Bake Cookies VII

Works like magic! I was a little doubtful at first b/c marshmallow fluff is too intensely sweet for me, but the peanut butter and mini-chips made a great combination! So easy - and no problems with stickiness - they rolled right up and were ready to pop in the mouth!

Clone of a Cinnabon

OK, not a Cinnabon, but definitely one of the best cinnamon rolls I have ever eaten! As per another reviewer, I turned the pan upside down and let all the gooey sweetness drip back over the buns. The cream cheese frosting seemed a bit like gilding the lily, however, next time I'll replace it with milk

Creole Chicken II

Deliciously different. I made this exactly as written, except with bouillon cubes and water instead of just the bouillon. We served it over spaghetti - husband and I both enjoyed it - especially the sweet contrast with the tomato sauce. Kids gave mixed reviews -

Broccoli Chowder

Pretty good - I omitted the nutmeg and added garlic and herb seasoning, and through in some leftover ham. Also pureed half the veggie mix, which turned the whole soup green. Two kids ate the "grouch soup" with delight, the third was not so impressed, but we will definitely have this again!
