Quick and Easy Cheese Bread

Reviewed: Jan. 10, 2006
I took the advice of some of the other reviewers and cut back the sugar to 1 1/2 Tablespoons, and I only had olive oil on hand. It didn't rise much, and I thought it was a lot like cornbread, which is fine, just really crumbly. It tasted okay, but not too much flavor. I think it would be really yummy with some garlic or herbs in it. It was very easy though, and fun to make with the kids!

Chocolate Chip Cheesecake Brownies

Reviewed: Feb. 1, 2006
Well I am on a diet, so this was dangerous to make. I just wanted to bake something with the kids I care for,,,and I am at their house, so thankfully I won't have to have these sitting under my nose at home! Anyways, we used some baking chocolate or something. They were little peices, instead of chips. So all I could taste was the chocolate, and I really wanted to taste the cream cheese. I think that this would be SOOOO good with no chocolate chips,,,maybe instead with cocoa powder in the dough part, and like raspberries or strawberries in the cream cheese. Oh that is making my mouth water. This is something that I think I will be making my husband! Very good!!! We baked it the way mariaemmanuella suggested. And I don't care for nuts, so I didn't use any.

Lemon Rosemary Salmon

Reviewed: Feb. 15, 2006
I made this for valentine's day as well, and I DO NOT care for fish AT all, but being from Oregon, my husband loves it. I ate EVERY bite! It was SOOO good! I couldn't believe it! I want more, but it's all gone! It was absolutely wonderful! I had to cook it with the skin on, since we didn't have a sharp enough knife to cut it off, so it was a tiny bit fishy tasting near the bottom, but still, WONDERFUL! I forgot to brush it with the olive oil, like others suggested, I just made it the way the recipe said and it came out PERFECT! I squeezed some fresh lemon juice over mine when I was eating it. I actually had forgotten to, until I was about half way done, it was so good that I was totally distracted! My husband said "PLEASE make this again!". I WILL!! THANK YOU for a great recipe that is SO simple and yummy!

Old Fashioned Chocolate Cake

Reviewed: Mar. 8, 2006
WOW!!! This turned out GREAT! I live at 5K feet, so usually cakes flop and turn out so gross, but I made this just the way the recipe says. I omitted the cinnamon, used whole milk instead of buttermilk, and substituted a "yogurt spread" for the butter. And baked in two 9" rounds for 28 minutes. Turned out GREAT! I added a bit more cocoa powder and it tastes great! I didn't use the frosting, sicne this is for the child I babysit, and his mom is going to decorate the cake for his birthday. Thank you! It's yummy!

Jan's Chocolate Cake

Reviewed: Mar. 8, 2006
I live at 5K feet, so I looked up how to make cakes for high altitude, and I followed the instructions, well it didn't turn out nice at all, also I think I over cooked it. It was dry and really hard to swallow! But I think I will give this a try again in the future, and just stick to the recipe!!

Kelsey's Favorite Stuffed Green Peppers

Reviewed: Mar. 31, 2006
VERY YUMMY!!! I used brown rice instead of white. I added several cloves of minced garlic, onion powder, and dried thyme and only 1 8oz can of tomato sauce. I accidentally dumped a bunch of the thyme in, but it turned out great!! And I think it could have used another can of tomato sauce, but it was still YUMMY!!! And also I only cooked it for about 30 minutes.

Stuffed Tomato Basil Chicken

Reviewed: Mar. 31, 2006
My husband and I LOVED this!! I didn't use bacon, and I didn't have any garlic marinade, and on my own I didn't use any cheese, but for my husband I did. I used a little olive oil, salt, pepper and garlic powder in place of the marinade. It was SOOO easy and SOOO yummy. My hubby asked for it again the next day! LOL!!

Sizzling Chicken Fajitas

Reviewed: Apr. 3, 2006
This was great! I didn't have any worcestershire, and since I know NOTHING about it, I used the rest of Balsamic vinagar, which was only about 1/2 teaspoon. Oh and I used beef instead of chicken. I added some garlic powder and cumin, salt and pepper. Great recipe!!

Hot and Tangy Broccoli Beef

Reviewed: Sep. 10, 2006
I loved this! I didn't use any vinegar, mostly becasue I don't like it, and also, I just forgot:) It turned out really tasty. I would add more garlic and red pepper flakes next time. I actually liked how it wasn't super sweet. It's a keeper!

Taco Soup VIII

Reviewed: Nov. 25, 2006
This was great! My husband and I both loved it! I added a can of diced tomatoes with green chilies and some fresh cilantro. I didn't have taco seasoning, so I used my own spices. It was fantastic! I'm making it tomorrow for my daughter's birthday party!---I did make it for her party and everyone RAVED about this. Several people took home the recipe too, and they are still talking about it-a year later!! What a hit!

Vegetable Filo Pie

Reviewed: May 27, 2007
So yummy!! My mom used to make something sort of like this, but didn't use cheese or egg. The egg really held all the veggies together. I didn't use any cheese. I found some fun leftovers in the fridge to use though! Some roasted chicken, spicy baked fries that I cubed, broccoli, corn and green beans. It was GREAT!!

Orzo with Chicken and Artichokes

Reviewed: Jan. 3, 2008
This is good. I didn't have the pancetta, pine nuts or wine. I added some sun dried tomatoes, and used the water that I soaked them in instead of the wine, I also added a bunch of salt, and some pepper (it was kind of bland without the bacon). Also used 1/2 the orzo like suggested by others. I really like this:) I'm not much of a vinegar person, but it's not overpowering in this dish. Thank you for this fun recipe!

Spicy Shredded Beef

Reviewed: May 25, 2008
This was an awesome way to use up chuck steak! I read the reviews about it not being spicy, so I used some cayenne and 3 chipotle peppers-I had never used them before, and they didn't smell spicy, but boy did it spice it up! Whew!! I cooked the meat for about 3-4 hours and I was skeptical about it being tender, because it still seemed tough when I tried to break it apart with the spoon, but after I cooled it, it was completely fork tender and shredded perfectly! Thank you for a great recipe!

Chicken and Broccoli Braid

Reviewed: Sep. 22, 2008
I love this stuff! My sister in law makes it PERFECTLY, my food never seems to turn out just right:) I did use "bigger" crescent rolls, that were like 10 oz a package, so maybe that made a difference, because it took FOREVER to get the dough cooked. I omitted the almonds and chopped everything in my little hand held chopper thing (you push the handle down and the blades rotate to chop everything very fine), well that worked great! It made the entire filling like a paste almost and it held together so nicely and the texture was fabulous!
