Best Ever Pie Crust

This pie crust is very forgiving. I consider myself an expert chef, who had never done a pie crust right. I made this, and even though I over processed it (too much water,too), it was great. The dough was a bit sticky due to the above, so I rolled it out between layers of wax paper that I had floured.

The best ever! Make it all year with seasonal fruits. Awesome over ice cream. You will make this again and again. I buy cinnamon chips at local taco shop.

Baked Potato Dip

This was the first time I made it. Mother's Day '08. It was gone in a flash. I halved it. Next time will make a full recipe. Also a good idea to have on hand allthe time for baked potatoes.

Gingerbread Pudding Cake

So good. Made it for my Mom's 81st birthday, as gingerbread is her fav. I cooked the minimum time, but would like to have had more sauce. Will try incresing the water next time.

Creamy Pesto Shrimp

OMG, SO GOOD. SERVED IT FOR A DINNER PARTY FOR 4 PEOPLE. ONE POUND OF SHRIMP WOULDN'T BE ENOUGH FOR 8, AND ALL THE PLATES WERE CLEAN. ONLY USED 3/4 LB PASTA, AND LOOSENED THE SAUCE WITH PASTA WATER. A KEEPER

I made these today for my daughter's wedding shower, since it was cinco de Mayo. I didn't make any changes, and everyone said "you made these?" Served with Amy's cilantro cream sauce, a great combo

Classic Cuban Midnight (Medianoche) Sandwich

THIS WAS THE BEST, AND SO EASY FOR ONE ON THE GEORGE! I DIDN'T HAVE SLICED PORK, BUT USED CARNITAS INSTEAD. THE GARLICKY FLAVOR MADE THIS SANDWICH A KEEPER.

THIS PASSED MY EXCELLENCE TEST. GOOD BASE FOR SOUP AND POT PIE, TOO. I DIDN'T HAVE SOUP ON HAND. SUBSTITUTED TWO PKGS OF CHICKEN GRAVY MIX, PLUS 4 CUPS WATER, AND OMITTED THE SALT. THIS IS GOING IN MY "KEEPER" FILE.
