Chicken Piccata II

Reviewed: Nov. 6, 2012
Kid friendly, quick weekday dinner served in 45 min., with simple ingredients on hand, a definite keeper in our household! Followed recipe and added sage to flour mix, used olive oil instead of butter as others suggested. I cut up the chicken breast as I needed to feed four hungry people with fantastic results! Served with sauteed peppers and mushrooms.

Quick Quiche

Reviewed: Oct. 3, 2006
Excellent recipe - very easy! I did not have bacon and used chopped ham. The egg mix was placed in my blender and I added a cup of brocolli, a dash of nutmeg and roasted minced garlic. Topped the quiche with frozen white sweet corn! Hubby loved it and picky two year old son had two slices! This is a keeper and can not wait to try other variations mentioned from other reviews!

Hungarian Mushroom Soup

Reviewed: Jan. 12, 2013
Super easy to make! I raided my fridge & freezer for additional ingredients & added chicken (sauteed with mushrooms) & chopped olives stuffed with garlic. Served with rice and family enjoyed every bit of it, no leftovers. Next time, will double the recipe, this was just enough for two adults & two children. Thank you for sharing this fantastic recipe!!

So yummy, super easy to mix. This is going to be my new year's drink, served in a champagne flute with frozen maraschino cherries. May even try diet cherry 7up.

Tantalizingly Tangy Meatloaf

Reviewed: Dec. 18, 2012
Improvised both ingredients & cooking method, still turned out amazing! Raided my pantry for meatloaf ingredients, still resulted with a winning combination! I had no breadcrumbs, subbed croutons (crushed); instead of onion soup mix, I used dried onion flakes; instead of egg, I added BBQ sauce (Lucille's BBQ) & cup of cheese (white cheddar/gruyere). Turned slow cooker on while I prepared ingredients & lined it with foil. Cooked high in slow cooker, high (4-hrs). Added the amazing pineapple glaze on last 20 min. Made this with 2-lbs ground beef, would make again 4-lbs next time! Thank you for a versatile & super tasty meatloaf ~ absolute keeper!!

Enchiladas Suizas

Reviewed: Sep. 14, 2012
Fantastic sauce! Easy easy peasy to make! Made a short cut by buying 2 lbs ready made pork carnitas, shredded and cooked in sauce. Didn't bother rolling, layered the tortilla, sauce, meat & cheese. Baked as usual & turned out amazing! Thank you for the recipe!

Reviewed: Sep. 14, 2012
A definite keeper!!! Very easy recipe and super tasty, my family has requested to add this on the weekly menu. I cooked mine in a crockpot. In a saucepan -- mixed the canned tomatoes, tomato sauce & chicken stock, cooked to a rolling boil. Meat mix was 3-lbs ground beef & 3-lbs italian sweet sausage, increaesd rice to 2.5C. Scooped sauce in the crockpot, layered the cabbage rolls and sauce. Cooked in crockpot for 2-hrs. Amazing! Thank you for the recipe!

Banana Sour Cream Bread

Reviewed: Mar. 27, 2007
Awesome recipe! I tweaked it a bit -instead of 3C sugar, I used 1/2 splenda-sugar (1 1/2C each splenda & sugar). Instead of 3/4 butter, used Smart Balance. Added a little flour to the cinnamon/sugar mix and topped the bread. I used mini loaf pans and it's been a hit!

Easy Meatloaf

Reviewed: Sep. 14, 2006
Very easy to make and very yummy! I also made a couple of alterations: added extra onions, dried parsley, I didn't have breadcrumbs so I used garlic croutons (put it in the blender). DH & picky eater DS (2 yo) loved it! If there's any other changes, I would double the sauce/topping. This recipe is a keeper!
