Chocolate Chip Banana Bread II

Balsamic Pea Salad

What says summer more than pea salad! this is a good down-home recipe, I did make a couple minor changes. I used Kraft 3 cheese Crumbles instead of the feta, also I sprinkled some bacon bits over the top and let this sit in the frig overnight before serving. The flavors mix together by letting this dish age overnight.

Marinated Tuna Steak

Made the recipe exactly, family loved it. When the tuna was done I let the steaks rest and I grilled some pineapple slices with a honey glaze, served over the tuna. Very yummy

Chococonut Chip Cookies

I substituted brown rice syrup for the white sugar, and used whole wheat flour, otherwise followed recipe. Very tasty and chewy cookie. I highly recommend.

Lasagna Roll-Ups

I used ricotta cheese in place of the cottage cheese. I took off the foil the last 15 min of baking to let the cheese turn golden. Great recipe.

Peanut Butter Vegetable Chicken Soup

I used chunky peanut butter which gives this soup a wonderful smooth flavor. I also cooked this recipe in my slow cooker all day on low. For those who think this recipe is to bland, part of cooking is tweaking recipes as you cook them. Be sure to have a couple tastes of this during the process and add some spice if you desire. Everyone has a different palate.

Blue Cheese Crusted Filet Mignon with Port Wine Sauce

Made this on Valentines day for my valentine, was a big hit, she loved it! Followed recipe exactly, cooked steaks to medium rare. Served with steamed asparagus with cream sauce. Very nice dinner

Colleen's Slow Cooker Jambalaya

I changed the recipe a bit by adding frozen pepper stir fry mix, a cup of uncooked rice, and for chicken I used some frozen boneless spicy chicken wings. Results were excellent and everyone loved it. The consistency was perfect, the spice level just right.

Pineapple Stuffing

I used Brownberry unseasoned stuffing bread cubes that come in a bag. 45 minutes into the baking I poured some pineapple chunks over the top and baked 15 more minutes. Let cool. This was well received and had excellent taste and texture.

Kerri's Holiday Punch

Made this over Christmas, I liked it ok, the better half loves it! I then added 1/4 cup Bacardi cream of coconut and now I love it. With the added coconut milk it has a tropical, creamy taste that I prefer.

Slow Cooker Chicken and Dumplings

I doubled the butter to add more taste. Also added some celery salt and black pepper. Cooked the biscuits 2 hours. Great tasting recipe, easy to make. Everyone here loved it.

Microwave Oven Peanut Brittle

Easy to make and very tasty. I used a Pyrex bowl and microwaved the mixture to a hard ball stage. ( 7 min ) Stirred in the butter and vanilla, then cooked for 2 more minutes. Added the baking soda. Dumped the mixture onto a buttered cookie sheet. I let it cool 20 minutes and then broke it up into pieces. Freezes well.

Made the recipe as listed but also brushed them with egg white and sprinkled sugar on top. These are quite a bit of work but very much worth it. I rolled out the dough in between sheets of wax paper. Baked them on parchment paper. They baked to a pastry golden brown.

Caramel Popcorn

Very good tasting caramel popcorn, beats any you can buy. I used 4 cheapo brand bags of microwave popcorn and followed the recipe exactly. Easy to make! a great treat.
