Calamari Salad

Very good recipe but I suggest changing a few things. Use 2 lbs calamari and add some salt to the boil. Next time I will not be using a full bunch of parsley. The flavor was way too overbearing. 1/2 bunch is more than enough. I added some lemon juice to the dressing and some extra salt. I will definitely be making this many more times.

Orzo with Chicken and Artichokes

Very tasty with the following changes. I sauteed cubed chicken breast in garlic, salt and olive oil beforehand. I added mushrooms to the recipe and sauteed them in olive oil, garlic and wine and then added the spinach and artichokes. I used marinated artichokes and added the liquid from the jar to the mix. Then add the cooked chicken and 1/2 to 3/4 of a package of dry italian dressing mix. This is key! Simmer for a few minutes before adding it to the orzo, pancetta and pinenuts. You don't need to necessarily add the balsamic vinegar at the end because there is tons of flavor but it is personal preference. Serve with grated parmesan cheese and YUM you've got a winner!

Yummy Honey Chicken Kabobs

This was fantastic! Very flavorful - I omitted the "kebob" factor and just used chicken tenders. Even my 3 year old loved it. I added crushed garlic and onion flakes and a little brown sugar to the marinade and marinaded for about 8 hours.

Quick Chicken Divan

Pretty good and easy. I used fresh broccoli and did not steam it prior to cooking which was a mistake. Make sure to steam the broccoli first. I used the lowfat versions of the soups with lowfat cheese and you can't even tell the difference.

Best Unsteamed Shrimp

Super good and easy. I also sauteed the shrimp in a skillet instead of microwaving it. Good alternative (but a tad more fattening) than steamed shrimp with old bay. Nice twist to the norm.

Salsa Chicken

It was okay. The plus side is that it's super easy. I would suggest trying the Monterey Chicken with Potatoes recipe on this site instead for a tastier and more complete meal. Almost as easy as the salsa chicken but much, much better!

Romantic Chicken with Artichokes and Mushrooms

Very, very good. I made a few alterations to the recipe, added herbs de provence and salt to the cubed chicken. I used the Trader Joe's marinated artichoke hearts that come in a jar which seem to be less oily than the kind you buy in the store and the sauce was excellent and didn't need any lemon. I also added cornstrach and half and half to thicken the sauce. Served over Pappardelle pasta and it was excellent!!!!

Creamy Au Gratin Potatoes

Yum! Instead of onions, I used 1 tsp onion powder and one tsp of garlic powder. I used a mixture of mozerrella, jack and cheddar cheeses and topped it with cheddar for a crust. Very, very good recipe. Tastes like the au gratin at Morton's.

Shrimp and Mushroom Linguini with Creamy Cheese Herb Sauce

Awesome recipe! I used white wine and boiling water with 8oz of cream cheese and the sauce was delicious. Also, using a wire whisk to break up the lumps of cheese in the pan really helps. Yummy and simple.

Zesty Slow Cooker Chicken Barbecue

I found this recipe to be extremely sweet. I love flavorful food but I thought this had a little "too" much flavor. Perhaps I used too much sugar or a strong BBQ sauce? As suggested, I shredded the chicken and made sandwiches. I gave it 4 stars because my husband liked it.

I don't know what all the hype is over this recipe. I thought it was very boring and bland - I even added a ton of extra garlic and salt. It looks a lot better than it tastes.

Indian Chicken Curry I

This was good but I felt it was missing something. It still doesn't taste like curry at an Indian restaurant. I used diced tomatoes instead of tomato sauce and added potatoes and carrots which worked out great.

Cream Cheese, Garlic, and Chive Stuffed Chicken

Yum! I substituted garlic and herb Boursin cheese instead of the cream cheese and chive mixture and used proscuitto instead of bacon and it was phenomenal!!! Will definitely make again.

Best Carrot Cake Ever

This really is the best carrot cake ever. Not too spicy, not too sweet, just perfect. The first time I made it I didn't soak the carrots in the brown sugar or add the pineapple and it wasn't that good. This time I followed the recipe exactly and it was excellent. I frosted the cake with the cream cheese frosting II. Perfect. Tastes like the carrot cake at Whole Foods which is my favorite.

Broiled Tilapia Parmesan

A different spin on tilapia..... I don't know if I would make this again but it was tasty. If you're not a big seafood fan this is probably the recipe for you because it really doesn't taste like fish. Definitely worth a try.

Artichoke Chicken

At first I was skeptical since this looked so incredibly simple but it truly is excellent and one of the simplest dishes to prepare. I used garlic powder instead of garlic pepper and added panko breadcrumbs on top as someone suggested. Yum!
