French Crepes
I grew up on crepes and my mother still makes them every weekend for my father and nephew. I was looking for a recipe to make for my boyfriend - who is from Germany and also grew up on crepes - and tried this one. My boyfriend was thrilled and said they tasted exactly like they should. I'm making them again this morning.

Black Bean and Salsa Soup
I saved this recipe over a year ago but just recently made. I followed the receipe exactly and thought it was just okay- 4 stars. I made it again a week later - with tweaks - and am so happy with it that I bought 8 cans of black beans this morning! The major change is pureeing two cans of beans and then adding a can of whole beans. Same measurements for everything else, but I use veggie broth instead. It's thicker, heartier, and doesn't separate. I don't even heat it- just pour it directly into containers and microwave at work at lunchtime.

Simple Roasted Chickpea Snack
I make these all the time. I usually toss the chickpeas with just olive oil, salt, and some crushed rosemary. Any seasoning you like will do. For those who didn't like the texture- they are best when they are VERY crunchy (not slightly crunchy) and practically popping off of the baking sheet. They come out like corn nuts.
