Flourless Peanut Butter Cookies

YUM! These are great! So simple and easy and absolutely delicious. Used 1/2 cup brown sugar, 1/2 cup white sugar and added about 1t vanilla. Will definitely make these again!

This is pretty good. I think it needs more sauce than is called for. This is rich without feeling too heavy.

Excellent and Healthy Cornbread

This was pretty good - not as sweet as I'm used to so I think next time I would up the sugar or add some honey. Consistency was great - very moist. I will definitley make this again!

Grandma's Slow Cooker Vegetarian Chili

This is yummy - quick to assemble and the flavors are great from being in the slow cooker. I added a few more spices to heighten the flavor as well. Good recipe!

Cilantro Lime Cod

This was alright - I probably made about 1 pound of fish and cooked it for 30 minutes which was too long. Though it was a bit over-cooked I thought the flavor was alright - I used 1 lemon and 1 lime, a shallot instead of minced dried onion, and extra cilantro both before cooking and after. Not sure if I'd make this again - maybe if I adjusted the cooking time since I liked the ease of preparation.

Flourless Chocolate Cake II

This was very simple to make and tasted great. Mine turned out quite flat - not sure if I did something wrong or if it had to do with the 9" (rather than 8") cake pan I used. Decadent and easy - I'd probably make this again.

Basil Tomato Soup

This was nice but a little tomato saucy - perhaps because of the 2 cans of crushed tomatoes. Might be better with a fresher source of tomatoes but for the speed and ease of the recipe this was very good.

First attempt at making hash browns - not bad! Mine turned out more like potato pancakes than hash browns but still tasted very good and were very easy to make. i'd try them again - maybe use less flour next time?

Butter Bean Burgers

These were good - easy and pretty tasty. The consistency is a bit odd - almost like mashed potatoes, but the flavor was good. I only used 1/2 the mixture and refrigerated the other 1/2 - i look forward to experimenting with the other half tonight!

Sea Bass Cuban Style

I really enjoyed the sauce for this dish. This was my first time buying/cooking sea bass and I think I'm not that crazy about the fish itself. I would consider making this again with another fish like cod or halibut.

Japanese Zucchini and Onions

This was a great, quick side dish. I didn't have any teriyaki sauce so i substituted with hoisin and some chili sauce - probably not quite the same flavor but this still turned out really good. Made a nice sauce considering how little liquid went into it.

Coconut Macaroons

These turned out pretty good - a little too chewy for my tastes, i prefer macaroons a little bit denser. I did have to cook them for more like 30 minutes before they started to brown.

French Toast I

I made this with 1/3 cup heavy cream and 1/3 cup soy milk cause it's what i had on hand and it turned out GREAT! i used a French baguette as the bread and it was restaurant quality. i'd never tried to make French toast before and i will definitely make this again since it was so easy and delicious...
